RHUBARB STICKY BUNS

Since I have seven rhubarb plants in my backyard, everything's coming up rosy about now. My husband and two teen sons are crazy about these sticky buns. I discovered the treat in an old recipe file I purchased at a rummage sale.

Steps:

  • In a small bowl, cut butter into brown sugar until crumbly. Stir in rhubarb. Spoon evenly into 12 well-greased muffin cups; set aside., In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder, salt and nutmeg; add to creamed mixture alternately with milk and mix well. , Spoon over rhubarb mixture, filling cups three-fourths full. Bake at 350° until a toothpick comes out clean, 15-20 minutes. Cool for 5 minutes before inverting onto a serving plate. Serve warm.

Rhubarb Pinwheels image

Steps:

  • In a large bowl, sift together dry ingredients. Cut in shortening until mixture resembles coarse crumbs. Combine egg and milk; add to crumb mixture, stirring just until moistened. Turn out onto a floured surface. Roll into a 12-in. x 10-in. rectangle. Brush dough with melted butter; sprinkle with sugar and top with rhubarb. Carefully roll up dough, jelly-roll style, starting with the shorter side. Cut into 1-in. slices. Reshape the slices as needed to form round pinwheels. , Place in a 13x9-in. baking dish. For syrup, bring water and sugar to a boil in a saucepan. Cook and stir until sugar has dissolved. Stir in food coloring if desired. Carefully pour hot syrup over pinwheels. Bake at 400° for 30 minutes or until golden brown. Serve warm with cream if desired.

Steps:

  • For Dough: Mix flour, baking powder, salt and 1/2 c butter or margarine. Stir in milk.
  • Roll out dough to approximately 10x15 rectangle.
  • For Filling: Mix rhubarb, 1 c sugar and cinnamon. Spread over dough. Roll up from long side like cinnamon rolls. Seal edge. Cut into 1 inch sections. Put cut side down in a 9x13 pan.
  • For Syrup: Mix sugar, water, brown sugar and margarine. Pour over rolls.
  • Bake at 350 degrees for 40 minutes.
  • Serve warm with vanilla ice cream!

Rhubarb Cranberry Roll Ups image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Generously grease a 9x9-inch baking dish.
  • Bring 1 cup of sugar with the cranberry juice and water to a boil in a saucepan and let boil for 1 minute, stirring constantly. Remove the cranberry juice mixture from the heat and set aside.
  • Sprinkle 3 cups of coarsely-chopped rhubarb into the bottom of the prepared dish.
  • Mix the biscuit mix, 2 tablespoons of brown sugar, the nutmeg, and cinnamon together in a bow; stir in vegetable oil and milk to make a soft dough. Roll the dough out on a floured surface into a square about 10 inches on each side; spread butter over the dough. Sprinkle 2 cups of finely chopped rhubarb over the butter; sprinkle the rhubarb with 1/4 cup of brown sugar and 2 tablespoons of white sugar. Roll the dough up jellyroll style, gently press the seam down, and cut the roll into 9 slices. Arrange the slices over the rhubarb in the baking dish. Pour the reserved cranberry syrup over the slices; sprinkle with the last 2 tablespoons of sugar.
  • Bake in the preheated oven until the biscuit topping is golden brown and the rhubarb is bubbling, 25 to 30 minutes.

AMISH GOOEY RHUBARB ROLLS

This is based on a recipe from a copy my daughter has of the cookbook "Amish Cooking" compiled by a committee of Amish Women, published by Herald Press. In the book, it is known as "Sarah Schwartz's Rhubarb Rolls" but it makes such deliciously gooey rolls that the new name is more apt!

Amish Gooey Rhubarb Rolls image

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, sift together the flour, salt, and baking powder.
  • Using a pastry knife or forks, cut the shortening into the flour mixture, then add the milk and mix well.
  • In a small bowl, combine the sugar, nutmeg, and cinnamon; set aside.
  • Roll the dough out on a lightly floured board to 1/4 inch thick, spread generously with the softened butter, then spread with the chopped rhubarb and sprinkle over the sugar mixture.
  • Roll up the dough like a jellyroll or cinnamon rolls, and cut into 1 1/2 to 2 inch pieces.
  • In a saucepan over medium heat, combine the hot water, butter, sugar, flour, and salt, and bring to a boil; let boil for 3 minutes to make a sweet sauce, then remove from heat and set aside.
  • Butter a 9x9-inch pan, then place the dough roll slices in the pan; pour the sauce over and around the slices.
  • Bake at 350 degrees F for about 12 to 15 minutes or until light brown.
  • Notes: you can substitute diced apples for the rhubarb.

  • In a saucepan, combine sugar, flour, cinnamon and salt. Stir in water; add butter. Bring to a boil; cook and stir 1 minute. Remove from heat.   • In a medium saucepan over medium-high heat, melt the butter. Once melted, slowly pour in the milk, and stir to combine. Once the mixture is heated through and hot to the touch. remove from heat.
  • In the bowl of stand mixer fitted with the dough attachment, or in a large mixing bowl, pour in the warm butter and milk mixture. Sprinkle the yeast over top and give it a stir to combine. Allow it to sit for 5 minutes or until foamy “proofing the yeast”. Add the egg, honey, salt and flour. Turn the mixer on low until all of the ingredients are combined and a ball begins to form, then turn it to medium/high and run it for 5-6 more minutes. If not using a stand mixer, stir the mixture with a large wooden spoon until combined, then knead by hand on a lightly floured surface for 4-5 minutes. Transfer the dough to a large bowl, cover and allow it to rise in a warm environment for 1 1/2 – 2 hours, or until doubled in size.
  • In a medium size saucepan over medium heat, combine the chopped rhubarb, honey, lemon juice and cornstarch. Heat the mixture to boiling, stirring occasionally. Once the mixture is boiling, turn it to low and allow it to simmer until thickened, about 10 minutes. Use the back of your spoon to break up the larger pieces. Remove the compote from heat and transfer it to another bowl, then place in the fridge until ready to use, or about 1 hour.
  • In a medium sized mixing bowl, combine the cubed butter, rolled oats, coconut sugar, flour and cinnamon. Use a pastry cutter or a fork to cut up the mixture until it forms pea-like crumbs. Set aside.
