Pan-Crisped Sausages image

Steps:

  • Prick sausages all over with a fork, and transfer to a skillet (preferably cast iron) over medium heat. Fill skillet with enough water to reach a quarter of the way up sides of sausages. Simmer, covered, until sausages are cooked through and water evaporates, 10 to 15 minutes. (If sausages have cooked through but water has not evaporated, uncover, and continue to cook until water evaporates.)
  • Continue to cook sausages, turning, until crisp and golden brown all around, about 3 minutes. Serve with cheeses.

Rich and Crisp Sausage image

Steps:

  • Fill the steamer pan halfway with water and bring to a rolling boil over high heat. Meanwhile, put the paste, fatback, and pepper in a bowl. Use a rubber spatula to mix well, making sure the pork fat is evenly distributed. Deposit all the paste in the center of the banana leaf and use the spatula to spread it into a disk 6 inches in diameter and 1 inch thick. Wet your palm with water and rub it in a circular motion to smooth the top. Wet your fingers and smooth the sides.
  • Lift up the leaf, place it in the steamer tray, and place the tray in the steamer. Cover and steam for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Turn off the heat and uncover. When the steam has dissipated, transfer the sausage on the leaf to a rack and let cool completely. Fresh from the steamer, the sausage will be white and slightly inflated. As it cools, it returns to its original size and the outside turns pale yellow. (The steamed sausage may be well wrapped and refrigerated for up to 1 week. Return it to room temperature before proceeding.)
  • You may deep-fry or bake the sausage for the final cooking. Traditionally it is deep-fried, which yields great color, while baking, of course, is easier. Cut the sausage into 3 fairly long pieces that will yield nice slices when cut. To deep-fry, pour oil to a depth of 1 1/2 inches into a wok or Dutch oven and heat to 350°F on a deep-frying thermometer. (If you don't have a thermometer, stand a dry bamboo chopstick in the oil; if small bubbles immediately gather on the surface around the chopstick, the oil is ready.) Add the sausage pieces and fry, turning with tongs for even coloring, for about 4 minutes, or until golden and crisp. Using tongs, transfer to paper towels to drain, blot with more towels, and let cool for 1 to 2 minutes. To bake, place the 3 sausage pieces in a toaster oven set to the highest heat (broil) and cook, for about 4 minutes on each side, or until golden and crisp. The pieces will hiss and pop, so monitor closely to prevent charring. The color isn't as even with baking as it is with deep-frying and the sausage takes longer to cook, but there is typically less hassle for the cook. Remove from the toaster oven, briefly blot with paper towels, and let cool for 1 to 2 minutes.
  • To serve, slice into 1/4-inch-thick pieces and serve piping hot.

1 pound (about 2 cups) Multipurpose Meat Paste (page 158)
2 ounces pork fatback, blanched in boiling water for about 1 minute until firm, cooled, and finely diced (generous 1/4 cup)
1/2 teaspoon black pepper, preferably freshly ground
8-inch-square piece fresh or thawed, frozen banana leaf, trimmed of brown edges, rinsed, and wiped dry
Corn or canola oil for deep-frying (optional)

Cornbread Sausage Stuffing for Thanksgiving image

Steps:

  • Preheat oven to 300°F. Butter baking dish; set aside. Arrange bread and cornbread in a single layer on a rimmed baking sheet. Bake, tossing occasionally, until completely dried out, 35-50 minutes. Let cool on baking sheet, then transfer to a very large bowl.
  • Meanwhile, heat a large skillet over medium-high. Break sausage into ½" pieces and cook, stirring and breaking up into smaller (about ¼") pieces with a wooden spoon or spatula, until browned, 8-10 minutes. Transfer to bowl with bread but do not stir.
  • Heat remaining 1 stick butter in same skillet over medium-high. Cook onions and celery, stirring often and scraping browned bits off bottom of pan, until just beginning to brown, about 10 minutes. Add to bowl with bread mixture and let cool.
  • Whisk eggs, broth, parsley, sage, thyme, rosemary, salt, and pepper in a medium bowl. Add to bread mixture and fold gently until thoroughly combined.
  • Increase oven temperature to 350°F. Transfer mixture to prepared dish, cover with foil, and bake stuffing until an instant-read thermometer inserted into the center registers 160°F, 40-45 minutes. Uncover and continue to bake until set and top is browned and crisped, 45-50 minutes more.
  • DO AHEAD: Stuffing can be assembled, but not baked, 1 day ahead. Cover and chill. When ready to bake, bring to room temperature and bake according to recipe. Stuffing can be baked 1 day ahead. Let cool completely, then cover with foil and chill. Keep covered and bake in a 350°F oven until warmed through, 25-30 minutes. Uncover and bake until top is crisped, 7-10 minutes more.

½ cup (1 stick) unsalted butter, plus more for pan
½ pound good-quality day-old crusty country-style or peasant bread, torn into ¾" pieces (about 5 cups)
½ pound day-old cornbread, broken into ¾" pieces (about 5 cups)
1 pound breakfast sausage links, casings removed, or ground breakfast sausage mix, broken up into ½" pieces
2½ cups chopped onions (about 1 medium plus 1 large onion)
3 medium celery stalks, sliced
2 large eggs
2½ cups low-sodium chicken broth
½ cup chopped parsley
2 tablespoons chopped sage
1 tablespoon chopped thyme
2 teaspoons chopped rosemary
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
A 13x9x2" or other 3-quart baking dish

ROASTED SAUSAGES WITH GRAPES AND ONIONS

You can use any kind of sausages in this cozy, autumnal dish, filled with roasted sweet grapes and vinegar-spiked onions. Spicy Italian sausages made from pork, chicken or turkey, fresh chorizo or merguez, will give the dish a kick, while milder sausages like chicken and apple, bratwurst or Weisswurst make for a gentler meal. Serve this on a bed of polenta or mashed potatoes, or with some crusty bread to sop up the vinegary, sausage-rich pan juices, and a green salad on the side. If you want to halve this recipe, reduce the oven temperature to 425 degrees; otherwise the smaller amount of food in the pan might get too brown.

Roasted Sausages With Grapes and Onions image

Steps:

  • Heat oven to 450 degrees. On a large (13-by-18-inch) rimmed baking sheet, toss together onion slices, 2 tablespoons oil, salt and pepper, and spread in an even layer. Roast for 8 to 12 minutes, until the onions turn translucent and the thinnest pieces take on a pale gold color at the edges.
  • After 10 minutes, add grapes, seeds and the remaining 2 tablespoons oil to pan with onions, and toss well. Spread in an even layer and nestle sausage into the mixture.
  • Roast until sausage has browned, 25 to 30 minutes, flipping sausage and tossing grapes and onions halfway through.
  • Transfer sausages to a platter or to individual plates. Add parsley and chives to pan with grapes and onions and gently toss (this warms up and wilts the herbs). Use a slotted spoon to transfer grapes and onions to plates with the sausages.
  • Add vinegar to rimmed baking sheet and scrape up any browned bits on the tray. Drizzle pan juices over the grapes and sausages, taste, and sprinkle more salt or vinegar on top, if desired.

4 cups seedless red grapes (1 1/4 pounds), destemmed
