SPICY HOT CHOCOLATE
Gently seasoned with a touch of chile powder, cinnamon and vanilla, this fragrant hot chocolate recipe is not too sweet and very complex. Using both cocoa powder and chocolate gives the roundest, deepest chocolate flavor while a mix of whole milk and cream makes it wonderfully rich and thick.

Steps:
- In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
- Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.

Steps:
- In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat.
- Combine the cocoa powder, sugar, cornstarch and cinnamon in a bowl. Whisk the cocoa mixture into the warm milk mixture until smooth. Bring to a boil, whisking frequently to prevent it from scorching.
- Remove the hot chocolate from the heat just after it has come to a boil. The mixture should be super rich and thick!
ULTRA-RICH HOT CHOCOLATE
Home made and ultra good! If this recipe proves to be too rich for you, simply add more milk to adjust it to your preference.

- While the milk is heating, sift the sugar and cocoa powder over a small bowl (I like to use a mesh tea strainer for this). Stir in the salt.

- Add the cornstarch to the milk and whisk it together until there are no more lumps. Next add the milk, heavy cream, and cocoa powder to a pot heated over medium low heat. Stir constantly so a skin doesn't form on top of the milk. You can add in any additional spices at this time.
- Once you start to see steam rising and little bubbles forming on the sides of the pot, remove the pot from the heat. Do not let this boil as the milk will curdle and the hot chocolate will get grainy. Add the chopped chocolate and vanilla to the pot and stir constantly until the chocolate completely melts through. It will look grainy in the beginning but it will become smooth and silky. Add sugar to taste. You may not need additional sugar.
