CHOCOLATE MINI LOAVES

The moist texture of these mini loaves resembles a pound cake. Each bite is rich and succulent, making this perfect for dessert as well as snacking.

Chocolate Mini Loaves image

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the melted chocolate chips, eggs and vanilla. Combine the flour, baking powder and baking soda; add to creamed mixture alternately with applesauce just until moistened. Fold in miniature chips., Divide batter among five greased 5-3/4x3x2-in. loaf pans, about 1 cup in each. Bake at 350° for 30-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For glaze, combine the chocolate chips, butter and water in a saucepan; cook and stir over low heat until chocolate is melted. Remove from the heat; stir in confectioners' sugar, vanilla and salt until smooth. Drizzle over cooled loaves.

RIO GRANDE MINI LOAVES

This came from a box of Near East Spanish Rice. It's a great change from ordinary meatloaves, and cooks up very quickly! I serve it with Spanish rice and a salad.

Steps:

  • Combine first 6 ingredients lightly, but well.
  • Divide mixture into 6 portions; shape each portion into a loaf about 1-inch thick.
  • Place in pan.
  • Bake in 350ºF oven 25 minutes.
  • Place slice of cheese on each loaf; spoon about 1 teaspoon salsa onto center of cheese.
  • Bake an additional 5 minutes.
  • Serve with additional salsa.

Steps:

  • In a bowl, dissolve yeast in water. Add sugar, seasonings, cheeses and 2 cups flour; beat until smooth Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; divide in half. Roll each half into a 15x10-in. rectangle. Roll up from long side; seal well. Cut each into three 5-in. loaves; seal ends. Place seam side down on a greased baking sheet. Brush loaves with water. Cover with plastic wrap coated with cooking spray; let rise until nearly doubled, about 30 minutes With a very sharp knife, make three shallow diagonal cuts across top. Bake at 400° for 15-20 minutes or until golden. Remove from pan; cool on a wire rack Brush with butter.
