SIMPLE ROASTED EDAMAME

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Toss edamame, olive oil, garlic, sea salt, and black pepper together in a large bowl until well-coated. Spread in a single layer on a baking sheet.
- Roast in the preheated oven, stirring halfway through, until edamame shells start to brown, about 20 minutes. Serve whole, popping beans out of the shell to eat.

CHILE-ROASTED EDAMAME

- Split the edamame pods and release the beans into a bowl. Discard the pods. Stir together the oil, basil, chile powder, onion salt, cumin, paprika and black pepper in a small bowl. Drizzle the mixture over the beans and toss to coat. Arrange the beans in a single layer in a shall baking dish. Roast, uncovered, at 375 degrees for 12 to 15 minutes, stirring once, until the beans begin to brown. Serve hot as a vegetable side dish or cooled as a snack. Refrigerate any leftovers.

Good for snacking or for a crunchy addition to your salad. You can play around with the seasonings you mix in (some ideas are: paprika, black pepper, chili powder, wasabi powder).

- Toss edamame, olive oil, and salt together in a large bowl. Spread in a single layer in a shallow baking pan.
- Roast in the preheated oven until edamame are crispy, 20 to 30 minutes.

ROASTED EDAMAME SALAD
Steps:
- Preheat the oven to 400 degrees F.
- Place the edamame, corn, scallion, garlic, olive oil, salt and pepper into a 13 by 9 metal pan and stir to combine. Place on the middle rack of the oven and roast for 10 to 15 minutes, just until the edamame begins to brown. Remove from the oven and place in the refrigerator until completely cool, approximately 30 minutes.
- Add the tomato, basil and vinegar to the edamame mixture and toss to combine. Taste and adjust seasoning, as desired. Serve chilled or at room temperature.

- The night before take your edamame beans out of the freezer to unthaw on a tea towel. Place in a plastic sealed container with paper towels inside to capture any remaining moisture. (You can do this all on the same day but I had the best results with the ones I dried overnight)
- In a medium bowl, dump your dried edamame beans, olive oil, sea salt and white pepper toss a pour out evenly onto a baking sheet.
- Bake for about 40-50 minutes or until crunchy and slightly golden brown and crunchy, if still chewy they need to bake longer. Toss gently with spoon or spatula every 10-15 minutes to make certain sure the roasted edamame beans are cooked evenly on all sides.

- Place your edamame in a colander and run under warm water for a minute or so. At this point, you can also add your can or cooked chickpeas, then leave the colander to drain into a container or your sink for about 10-15 minutes.
- Place into a bowl and add oil, spice mix, and salt to taste. Arrange on two cookie sheets covered with parchment paper or a silicone mat, and bake for 45 minutes, gently shaking the pan halfway. Check to see if they have reached your desired texture, and bake in 5 minute increments if not.
- Store in a paper bag or other breathable container for a few days. If you put this recipe in a Tupperware or similar container, they'll become soggy quicker.
