ITALIAN MEATLOAF

Italian Meatloaf image

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

  • In large bowl, combine the crumbs, egg, onion, salt and oregano; crumble the meat over the top. Mix gently. Stir in 3/4 cup tomato sauce; set aside. Cut two pieces of waxed paper 15-in. long. Place meat mixture in center of one rectangle; cover with second rectangle. , With a rolling pin, press meat into a 13x9-in. rectangle. Remove top sheet of waxed paper. Sprinkle meat with cheese and mushrooms; top with remaining tomato sauce. Roll up meat, jelly-roll style, starting at narrow end; use waxed paper to help. Italian Mozzarella-Stuffed Meatloaf image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix beef, onion, 1/2 of the tomato sauce, bread crumbs, egg, garlic, 1/2 teaspoon oregano, salt, and pepper in a large bowl. Pat into a 1/2-inch-thick rectangle on a sheet of waxed paper. Sprinkle mozzarella cheese on top.
  • Lift up the short side of the waxed paper to start rolling up the meatloaf. Roll tightly, peeling back paper as you go. Seal edges in place. Transfer meatloaf to a loaf pan.
  • Bake in the preheated oven for 1 hour. Combine remaining tomato sauce and 1/2 teaspoon oregano; pour over meatloaf and sprinkle with Parmesan cheese. Bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes before serving.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Thoroughly mix beef, pasta sauce, bread crumbs, onion, ketchup, egg, garlic, oregano, salt, and ground black pepper together using your hands in a large bowl.
  • Spread 1/2 the meat mixture into the bottom of a loaf pan. Spread mozzarella cheese over the center of the meat. Spread remaining meat mixture over the cheese, pressing edges of meat together on the sides to seal in the cheese.

Steps:

  • Set oven to 375 degrees.
  • Grease a 13 x 9-inch baking pan.
  • Mix the first 12 ingredients together.
  • On a large sheet of doubled waxed paper, pat the mixture into a 13x10-inch rectangle.
  • Arrange the ham slices on top of the beef mixture, leaving about 1-inch space around the edges.
  • Sprinkle the mushrooms over the ham.
  • Sprinkle the mozza cheese over the mushrooms, then sprinkle the Parmesan cheese over the mozza cheese.
  • Starting at the smaller side, roll the meat up jelly roll style (using the wax paper to lift up the beef mixture).
  • Lightly press together edges the best that you can (they don't have to be closed completely).

  • Brush with remaining 1/2 cup (or more of pizza sauce).

  • Pre-heat oven to 350°F.
  • Mix meat and remaining meatloaf ingredients.
  • Flatten meat mixture out on a wax paper lined cookie sheet in a thin layer 1/2" thick x 12" long x 6 to 8" wide.

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine ground beef, eggs, breadcrumbs, Parmesan cheese, herbs, garlic, onion, ketchup, Worcestershire. Mix well, gradually adding the milk (if it seems too moist, add bread crumbs until it is a consistency that will form a loaf without flattening. Spray a large baking or roasting pan with a non-stick spray and press the meatloaf out. Layer cheese slices and ham, covering the center line of the meatloaf, then close it together and tuck in the ends, forming a loaf which is oblong. Criss-cross the bacon strips to cover the loaf. Italian Meatloaf Filled With Capicola Roll image

Steps:

  • Preheat oven to 350 degree`s.
  • In a large bowl add the bread crumbs and broth and let soften.
  • Add the next 8 ingredients mix in well(Pesto to pepper flakes).
  • Add the meats and eggs mix together.
  • On a damp counter place plastic wrap down. Then the meat mixture in one layer 9 x 12.
  • Lay the ham & cheese roll in one row across the long lenght of the meat. Press the Cappicola into the meat.
  • With the aid of the plastic wrap pull up the long side meat over the cheese and continue to roll sealing in the cheese.
  • Roll onto a large baking pan. Adjust the roll so seam is down and cheese is seal inches. removing the plastic wrap, add discard wrap.
  • Place the bacon slices over meat if using.
  • Bake in oven for 40-50 minutes. Or until internal temp is 160 degrees when inserted in center of loaf.
  • Let the meat rest room temp for 15-20 minutes. Important for the juices to redistribute.

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Heat 1 tablespoon oil in a skillet over medium heat. Add mushrooms, bell pepper, and onion; cook and stir until just soft, 3 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds. Set mixture aside and let cool.

Steps:

  • To make tomato sauce, heat olive oil in a saucepan over medium-low heat; cook and stir the onion, green pepper, and celery in the hot oil until the onion is soft, about 5 minutes. Pour the undrained whole tomatoes, tomato sauce, 1 1/2 teaspoons Italian seasoning, sugar, oregano, 3/4 teaspoon garlic powder, Worcestershire sauce, and water into a blender and blend until smooth. Pour the tomato mixture into the saucepan and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in 1/4 cup parsley. Set aside.

This meatloaf is so simple but oh so tasty. I usually use a flavoured pasta sauce to give extra flavour & dried basil sprinkled on top of the tomato is fine if fresh is not available.

Steps:

  • Combine mince, egg, breadcrumbs, sauce, parsley, onion and garlic. Mix well to combine.
  • Lightly press half the mixture into the base of a foil-lined 10x20cm loaf tin.
  • Top with tomatoes, cheese & basil.Lightly press remaining mince mixture over this and smooth top.
  • Bake at 200.C for about 1 hour or until cooked through.
  • About 10 mins before the end of coooking you can spread some extra sauce on top if you like.
  • Remove from tin & serve sliced with vegies or salad.

Starting on one end (I rolled mine starting on the 12" side) roll up tightly, using wax paper to start roll & tucking in spinach leaves; seal ends. Place seam side down in an ungreased 9x13" glass baking dish.
  • Bake 1 hour. Spread remaining marinara sauce over top. Bake 15 minutes longer or until thermometer inserted in meat loaf reads 160*F. Let stand 5-10 minutes before serving.
