ROTEL CHEESE DIP W/ BEANS
These three ingredients make an exceptional dip. The beans add flavor, texture and nutrition. We like to make "macho nachos" using this as the cheese sauce. It tastes good in breakfast burritos too!

- Cook on low heat, stirring occasionally, until cheese is melted.
- Serve warm with tortilla chips.
- This works well in the crock pot too. Just cook on low for 3-4 hours, stirring halfway through.

EASY RESTAURANT STYLE ROTEL CHEESE DIP
I grew up eating Rotel dip and have always made it the traditional way until a friend told me about this method. It is so easy to make smooth rotel dip that will stay creamy even after refrigeration. The secret is to heat the Rotel tomatoes instead of the cheese.

- Place Rotel tomatoes (do not drain) in a microwave safe dish.
- Microwave on high until scalding hot, about 3-5 minutes. (Time may vary depending on microwave.).
- Cube Velveeta and place in a blender.
- Add garlic powder, cumin and scalding hot rotel.
- Blend until smooth and creamy.
- Feel free to adjust spices & amounts to suit your taste, just don't forgo the method.
- Serve with you favorite chips.
- Refrigerate any leftovers.

This is the best and easiest dip EVER!! I take this dip to parties all the time. EASY EASY EASY...and it follows my simple rule of recipes...."Does it have cream cheese in it?" Yes....okay...this has to be a good recipe!! Haha! :)

Steps:
- Cut blocks of cream cheese into cubes and put in small crock pot.
- Pour can of rotel (do not drain) over cream cheese.
- Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
- This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
- Serve with Tortilla Chips! Enjoy! :).
