BBQ RUB-ROASTED CHICKEN

BBQ Rub-Roasted Chicken image

Steps:

  • In a bowl large enough to fit the chicken, combine the water, lemon juice and halves, salt, and sugar. Whisk until salt and sugar are dissolved. Add the chicken to the bowl, cover and refrigerate for at least 6 hours, or overnight. If the brine does not fully cover the chicken, rotate the chicken halfway through the brining process. Preheat the oven to 350 degrees F.
  • In a small bowl add half of the BBQ Rub and the butter. Mix until well combined. Refrigerate for a few minutes if the butter begins to melt after mixing. Remove the chicken from the brine and pat dry with paper towels. Use your fingers to gently release the skin from the flesh of the breasts and legs. Spread the butter mixture evenly under the skin and over the breast and legs. Pat the remaining BBQ rub mixture all over the bird. Transfer the chicken to a roasting pan fitted with a roasting rack and bake until golden and the juices run clear, basting frequently, for about 1 hour 15 minutes. Remove the chicken from the oven and raise the oven temperature to 450 degrees F. Baste the chicken thoroughly with the drippings in pan, return to the oven, and let bake until the skin is brown and crispy, about 15 minutes. Remove from the oven to a cutting board and let rest for 10 minutes before cutting. Carve the meat and arrange on a serving platter. Serve with Lemon and Walnut Waffles, if desired.
  • Combine all the ingredients in a small bowl and set aside.
  • Preheat the oven to 225 degrees F.
  • In a large bowl sift to combine the flour, baking powder, 2 tablespoons of the sugar and salt. In small bowl whisk the egg yolks until smooth, then add the milk, vegetable oil, lemon extract, and lemon zest. Make a well in the center of the dry ingredients. Pour in the liquid ingredients and gently stir the batter, with a wooden spoon, until just combined. Be careful not to overmix. You can use a hand beater or a stand mixer on low speed, if desired.
  • In a very clean bowl, whisk the egg whites until foamy. Add the remaining sugar and beat until soft peaks form. Gently fold the whites into the batter. Pour about 1/4 cup to 1/2 cup batter into an oiled waffle iron, sprinkle with walnuts, then close the iron. Cook until golden brown, about 5 minutes, depending on waffle iron settings. Transfer to a serving platter and keep warm in a low oven. Repeat with remaining batter. Serve warm with maple syrup.

3 1/2 cups milk
1/2 cup vegetable oil
1 teaspoon lemon extract

Oil, for waffle iron
1 cup chopped walnuts
Maple syrup, for serving

From a cookbook called Down Jersey Cooking by Joe Colanero. This has such interesting ingredients and it was shared by Bill Cutts, a 4th generation cranberry grower from Burlington County. This recipe is their family favorite.

Steps:

  • Sprinkle chicken with salt.
  • In a large stewing pan, brown chicken pieces, in butter and oil a few at a time. Don't crowd pan.
  • Add onion, orange juice, tabasco, cinnamon and ginger.
  • Cover and simmer 30-35 minutes until chicken is tender. Remove chicken to a platter and keep warm.
  • Add cranberries, sugar and molasses to skillet. Cook uncovered 5 minutes; stirring occasionaly.
  • Blend cornstarch and cold water and add to the skillet stirring rapidly.
  • Cook until sauce thickens, about 1 minute.
  • Pour sauce over chicken and serve.

  • In a blender, pulse all the marinade ingredients together to form a smooth paste: chopped ginger (3 tablespoons), chopped garlic (3 tablespoons), salt (1 teaspoon), chili powder (1 teaspoon), garam masala (1/2 teaspoon), lime juice (2 teaspoons), oil (2 teaspoons), and yogurt (1 cup). In a bowl or plastic container, fully mix chicken with marinade. Cover and leave to marinate in the fridge for at least 6 hours and up to 24 hours.
  • To make the Makhani sauce, in a large heavy pot or Dutch oven, heat oil (1/3 cup), chopped garlic (2 tablespoons), bay leaves (2), cardamom pods (6) and cinnamon sticks (2), over medium heat. When the garlic starts to sizzle, stir and continue to toast the garlic and spices for 30-40 more seconds. Turn the heat down to a gentle simmer and add the grated garlic (2 tablespoons) and grated ginger (1 tablespoon). Cook for 5 minutes or so, stirring occasionally, regulating the heat so the ginger-garlic paste doesn’t burn. Add the pureed tomatoes, salt (2 teaspoons) and chili powder (1 1/2 teaspoons). Bring to a boil, lower to a simmer and cook until reduced by about half, about 20-25 minutes, stirring occasionally. Add butter (1 tablespoon), garam masala (1 teaspoon), sugar (1 1/2 tablespoons), honey (1 tablespoon), cumin (1 teaspoon), and fenugreek (1 teaspoon), if using.   • Grill the Chicken: Heat the grill to medium-high. Remove the chicken from the marinade and place it on the hot grill rack. Brush with melted butter (2 tablespoons) and grill for 5-6 minutes per side, or until cooked through and nicely charred in spots. Cut the chicken into 1 1/2 inch pieces.
  • With the makhani sauce in a large pot, add the cream (1/3 cup) and the grilled chicken. Simmer very gently for 10-15 minutes, until the chicken and sauce are heated through.

  • Making the curry takes about 45 minutes. Start by crushing or finely dicing the ginger and 2 cloves of the garlic. A mortar and pestle is ideal. Set aside.
  • Roughly chop the remaining 2 cloves of garlic. Add the 1/2 cup oil to a large pan and set over medium high heat, then add the garlic. Cook garlic until golden brown, about 2-3 minutes, watching carefully to ensure it doesn't burn.
  • Remove the garlic with a skimmer or slotted spoon and set aside. Add the bay leaf, cardamon, and cinnamon. Cook for about 1 minute, or until the cinnamon stick opens.
