THE BEST HUMMUS

This is a classic tahini-forward, bright and lemony hummus, and is similar to what you would find in Israel. We tried this recipe with from-scratch dried chickpeas as well as with canned, and the flavor and texture were only marginally better with the freshly cooked. And we saved 24 hours of prep time! So for a creamy, satisfying 15-minute hummus, we're going with the can.

Steps:

  • Drain the chickpeas in a medium mesh sieve, reserving the liquid. Reserve about 7 chickpeas for garnish.
  • Process the tahini, garlic and cumin in a food processor. With the motor running, slowly drizzle in 2/3 cup of the reserved chickpea liquid (if you don't have exactly 2/3 cup, add water until the total amount is 2/3 cup) and process until light and very creamy, 1 to 2 minutes. The mixture will appear broken at first but will come together after all the liquid is added and has been processed for a minute or two.
  • Add the chickpeas, the lemon juice and 1/2 teaspoon salt to the tahini mixture. Process until the mixture is extremely smooth, scraping down the sides occasionally, about 4 minutes. Thin with more water if you prefer a looser consistency. Taste and season with more salt, lemon juice or cumin as desired.
  • Spoon the hummus into a shallow bowl, making a well in the center, and drizzle liberally with oil. Top with the reserved chickpeas and sprinkle with paprika. Serve with pita bread, pita chips or cut raw vegetables.

One 15.5-ounce can chickpeas
2/3 cup tahini
1 clove garlic, finely grated
1/4 teaspoon ground cumin, plus more if desired
1/3 cup fresh lemon juice, plus more if desired
Kosher salt
Extra-virgin olive oil, for drizzling
Hot smoked paprika, for sprinkling
Toasted pita bread, pita chips or cut raw vegetables, for serving

I love roasted red pepper hummus, and black olive hummus. This little experiment turned out great and was quick and easy to make. I have made it several times and have substituted black beans and it was very tasty. Enjoy.

Steps:

  • 1. Throw everything in the food processor and pulse until the ingredients are combined. Then refrigerate until use.
  • 2. You can serve this with crackers, pita chips, corn chips, or any thing you can think of.

1 can(s) garbanzo beans
3/4 c salsa (any heat you desire
dash of cummin
2 clove garlic
handful of green olives with pimentos
2 Tbsp minced onion
1/2 c olive oil
1 Tbsp tahini
1 leaf of cilantro

PARSLEY HUMMUS

I'm convinced that parsley, used so abundantly in the cuisines of Greece, Turkey, the Middle East and North Africa, is one reason those diets are so healthy. In addition to being an excellent source of vitamins A, C and K and a good source of iron and folate, it is rich in volatile oils (which give it its astringent flavor) and flavonoids. The volatile oils contain components that have been shown to inhibit the activity of harmful elements in the body, and studies have attributed antioxidant properties to the flavonoids, particularly luteolin. It's important to pick the parsley leaves off the stems, because unlike the stems of cilantro, parsley stems are tough and should be discarded. The leaves reduce quite a bit in volume when you chop them, especially if you chop them fine. Two cups of parsley leaves will yield a little over 1/2 cup of finely chopped parsley. This hummus has a pale green hue and herbal overtones.

Steps:

  • (Optional step): If you want to take the time to do this, remove the papery outer shells of the cooked chickpeas by gently squeezing them between your thumb and first two fingers. Discard the shells.
  • Turn on a food processor fitted with the steel blade and drop in the garlic. Process until the garlic adheres to the sides of the bowl. Turn off the machine and scrape down the sides of the bowl. Add the chickpeas, parsley and salt to taste and process to a coarse purée. Stop the machine and scrape down the sides of the bowl.
  • Turn on the machine and add the lemon juice and olive oil with the machine running. Add the tahini and process until the hummus is smooth. It should not be too thick or dry. If it is, thin out as desired with yogurt or water, or with the broth from the chickpeas if you cooked them. Season to taste with salt. Scrape out into a bowl or mound on a platter. Run a fork over the surface and drizzle with olive oil if desired. Serve with crudités or pita bread.

2 large garlic cloves, peeled, cut in half, green shoots removed
2 cup flat-leaf parsley leaves
Salt to taste
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil, plus additional for drizzling if desired
3 tablespoons sesame tahini, stirred well if the oil has separated
Plain low-fat yogurt as needed

  • Cooking canned chickpeas is my favorite hack for ULTRA creamy hummus! Drain and rinse your beans then add to a medium saucepan with 1/2 tsp baking soda. Pour in water until water line is about 1-2 inches above the chickpeas and set to boil on high. Boil for 20 minutes, tossing in 2 cloves of garlic in with it after 10 minutes.
  • While the chickpeas boil, start your salsa. Slice the stems off the peppers and cut in half lengthwise. Scoop out the seeds/membrane with a spoon or gloved fingers if needed. Cut peppers into strips and finely mince. Place in a small bowl with remaining ingredients (and any jalapeño seeds you want to add back in for extra heat) and allow to marinate.
  • Pour chickpeas and garlic into a fine mesh strainer and drain. You can remove any skins that may have popped off if you'd like but it's totally optional!
  • In a trusty food processor or high-powered blender, add chickpeas, lemon juice, sea salt, cayenne, cumin, and olive oil. Blend well.
