SANTA FE STEAK SALAD
Steps:
- Combine the chili powder, cumin, salt and pepper. Rub 1 tablespoon of the oil, and then the combined spices, into the meat and let it marinate while you prepare the vegetables.
- Preheat the oven to 500 degrees.
- In another tablespoon of oil, cook the red onion for 1 minute, then add the corn and cook for 305 minutes, or until just tender. Transfer to a bowl, add the tomatoes, basil and chilies and combine gently.
- Roast the steak for 15-18 minutes for medium rate. Let it stand for 10 minutes more, then slice into thin strips.
- Combine the pan juices from the steak with the remaining 3 tablespoons oil, the vinegar, and salt and pepper to taste.
- Arrange the lettuce on four plates, divide the corn mixture and steak among them, and drizzle the dressing over the salads.
BLACKENED STEAK SALAD

- For spice mixture:
- Mix all ingredients in small bowl. (Can be made 1 week ahead. Store airtight at room temperature.)
- For salad:
- Whisk oil, vinegar and mustard in large bowl to blend. Season with salt and pepper. Add greens, bell pepper and onion and toss to coat. Divide salad between 2 plates.
- Spread spice mixture on plate. Coat both sides of steaks with spice mixture. Dip both sides of steaks into melted butter. Heat heavy large skillet over high heat until very hot. Add steaks and cook to desired doneness, about 2 minutes per side for medium-rare. Transfer to cutting board; let stand 2 minutes. Thinly slice steaks crosswise. Arrange slices atop salads. Sprinkle with cheese. Garnish with tomato and serve.

- In a small saucepan, cook and stir onion in oil over medium-high heat until tender. Transfer to a blender.
