SANTA FE STEAK SALAD

Santa Fe Steak Salad image

Steps:

  • Combine the chili powder, cumin, salt and pepper. Rub 1 tablespoon of the oil, and then the combined spices, into the meat and let it marinate while you prepare the vegetables.
  • Preheat the oven to 500 degrees.
  • In another tablespoon of oil, cook the red onion for 1 minute, then add the corn and cook for 305 minutes, or until just tender. Transfer to a bowl, add the tomatoes, basil and chilies and combine gently.
  • Roast the steak for 15-18 minutes for medium rate. Let it stand for 10 minutes more, then slice into thin strips.
  • Combine the pan juices from the steak with the remaining 3 tablespoons oil, the vinegar, and salt and pepper to taste.
  • Arrange the lettuce on four plates, divide the corn mixture and steak among them, and drizzle the dressing over the salads.

1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon freshly ground black peper
5 tablespoons vegetable oil
1-1 1/2 pounds boneless sirloin or top round steak, at least 1-inch thick, trimmed of fat
1 medium red onion, chopped
4 kernels from ears of corn, or 10-ounce package frozen corn
2 medium tomatoes, seeded and cut into 1/2 inch pieces
3 tablespoons fresh basil, chopped
2 to 3 pickled jalapeño peppers, stemmed, seeded and cut into thick strips
2 tablespoons red wine vinegar
1 small head red leaf lettuce, leaves separated, washed and dried

Blackened Steak Salad image

Steps:

  • For spice mixture:
  • Mix all ingredients in small bowl. (Can be made 1 week ahead. Store airtight at room temperature.)
  • For salad:
  • Whisk oil, vinegar and mustard in large bowl to blend. Season with salt and pepper. Add greens, bell pepper and onion and toss to coat. Divide salad between 2 plates.
  • Spread spice mixture on plate. Coat both sides of steaks with spice mixture. Dip both sides of steaks into melted butter. Heat heavy large skillet over high heat until very hot. Add steaks and cook to desired doneness, about 2 minutes per side for medium-rare. Transfer to cutting board; let stand 2 minutes. Thinly slice steaks crosswise. Arrange slices atop salads. Sprinkle with cheese. Garnish with tomato and serve.

For spice mixture
1 tablespoon paprika
2 teaspoons ground black pepper
1 1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
For salad
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
6 cups (packed) mixed baby greens
1/2 green bell pepper, thinly sliced
1/2 cup thinly sliced red onion
2 5- to 6-ounce beef tenderloin steaks, each about 1/2 inch thick
3 tablespoons butter, melted
6 tablespoons crumbled blue cheese (about 3 ounces)
1 tomato, quartered

  • In a small saucepan, cook and stir onion in oil over medium-high heat until tender. Transfer to a blender. Add the green chiles, cilantro, jalapeno, jelly, bouillon, Worcestershire sauce, garlic, seasoned salt and oregano; cover and process until smooth., Return mixture to the same pan; cook over medium heat until heated through, stirring occasionally. Set aside and keep warm., Sprinkle steaks with salt and pepper to taste. Broil 4-6 in. from heat for 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).   • Crumble sausage into a large skillet; cook for 6-8 minutes over medium heat until fully cooked. Drain.
