Steps:
- Heat oil in skillet on med, add onions, cook until soft.
- Add celery, cook until crisp tender.
- Increase heat to med hi, add peas.
- Cook until peas are heated through (about 6 minutes).
- Stir in celery leaves, salt and pepper.

BRAISED CELERY
Steps:
- Peel any of the fibrous outer stalks of celery with a vegetable peeler and slice into 1-inch pieces on the bias.
- Heat the butter in a 10-inch saute pan over medium heat. Once melted, add the celery, salt and pepper and cook for 5 minutes until just beginning to soften slightly. Add the beef broth and stir to combine. Cover and reduce the heat to low. Cook until the celery is tender but not mushy, approximately 5 minutes. Uncover and allow the celery to continue to cook for an additional 5 minutes or until the liquid has been reduced to a glaze. Transfer to a serving dish and garnish with the reserved leaves.

- Trim stem ends from broccoli rabe and discard. Cut remainder crosswise into 1 1/2-inch pieces.
- Cook broccoli rabe and peas in a 4- to 6-quart pot of boiling salted water until broccoli rabe is wilted and stems are crisp-tender, 2 to 3 minutes. Drain well in a colander.
- Heat oil with garlic in a 12-inch heavy skillet over moderately high heat, turning garlic frequently, until garlic is golden, 1 to 2 minutes, then discard garlic.
- Add broccoli rabe, peas, salt, and pepper to skillet and sauté, stirring, until well coated with garlic oil, about 2 minutes.

- Saute celery and mushrooms in butter until tender crisp; add the tiny peas and cook for a few more minutes.
- Season with celey salt and pepper.
- Combine soup and waterchestnuts in seperate small bowl.
- In a buttered 1 1/2 quart casserole arrange half of the vegtable medley, top with soup and repeat the layers.
- Top with the fresh parmesan cheese.
- Bake 350 degrees for 20 minutes.
