THAI SCALLOP SALAD

- Place the scallops on a large plate lined with a paper towel and pat dry. Combine the lime juice, shallot, chili sauce, fish sauce and 1/4 cup vegetable oil in a large bowl; whisk to combine. Add the cabbage, cucumbers, radishes, apple and basil to the dressing and toss well to coat.
- Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the scallops in an even layer (do not crowd the pan). Cook, undisturbed, until a golden crust forms on the bottom of the scallops, about 3 minutes. Flip the scallops (they should release easily from the pan; if they stick, cook 1 more minute). Cook until lightly browned on the other side, about 2 minutes.
- Divide the cabbage salad among plates and add the scallops. Top with the peanuts and serve with lime wedges.

- In a large skillet, heat 1 teaspoon oil over medium-high heat. Add half the scallops; stir-fry until firm and opaque. Remove from pan. Repeat with an additional 1 teaspoon oil and remaining scallops., In same skillet, heat remaining oil over medium-high heat. Add vegetables; stir-fry until crisp-tender, 7-9 minutes. Stir in peanut sauce and salt. Return scallops to pan; heat through. Serve with rice and, if desired, lime wedges.

- In a small bowl, combine the cornstarch, broth, peanut butter and chili sauce until smooth; set aside. , In a large skillet, saute scallops in 1 tablespoon oil for 2-3 minutes on each side or until firm and opaque. Remove with a slotted spoon and keep warm. , In the same pan, saute the onion, red pepper and cashews in remaining oil for 3-5 minutes or until vegetables are crisp-tender. Add garlic; cook 1 minute longer., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add scallops and corn; heat through. Serve with pasta if desired.

- Soak skewers in water 30 minutes.
- Pound garlic, chile, and sugar to a fine paste with a mortar and pestle. Stir paste together with vinegar, fish sauce, water, and lime juice. (Alternatively, purée sauce ingredients together in a blender.)
- Pat scallops dry. Thread 4 on each skewer (flat sides facing out; see photo), then brush both sides with oil (2 teaspoons total for 4 skewers). Season scallops with salt and pepper.
- Brush a 12-inch nonstick skillet with remaining teaspoon oil and heat over high heat until hot but not smoking. Sear scallops, turning over once, until just cooked through, about 6 minutes total.
- Serve scallops with sauce spooned over.

- Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chile and white parts of scallions, stirring occasionally, until lightly browned.
- Transfer with a slotted spoon to paper towels to drain.
- Pat scallops and shrimp dry separately and season with salt.
- Heat remaining 1 1/2 tablespoons oil in same skillet over moderately high heat until hot but not smoking, then cook scallops until browned, 2 to 3 minutes on each side (scallops will be almost cooked through).
- Transfer scallops to a bowl with slotted spoon and sauté shrimp in same skillet, stirring occasionally, until almost cooked through, about 3 minutes.
- Add shrimp to scallops.
- Add coconut milk, curry paste, broth, brown sugar, fish sauce, and lime juice to skillet, then simmer, stirring occasionally, 5 minutes.

SCALLOPS IN THAI SEAFOOD SAUCE
Steps:
- Season the scallops with salt and pepper. Set aside. Place the garlic, chiliies, cilantro, fish sauce, Agave, and lime juice in a food processor and process until well incorporated.
- Add oil to a large skillet. Sear the scallops until browned. Work in batches removing scallops to plate.
- Once all are browned, place back in pan and pour the sauce over and bring to a boil. Turn heat off and serve immediately.

- Remove the side-muscle from each scallop. The side-muscle is the little rectangular tag of tissue on the side of the scallop. Don't worry if you miss one; they are edible but tougher than the rest of the scallop. Just pinch it off and discard. (Sometimes, they wash away during harvesting.) Put your scallops in a non-reactive bowl and cover them with milk. Soak them for one hour. Cook your rice according to the manufacturer's directions adding lime leaves to the cooking water. Prepare all of your ingredients.
- In a small saucepan, simmer the green onions in the vinegar over low heat until the vinegar is almost gone, about 5 minutes.
- Add in the coconut cream, half of the lime zest (reserve the rest for garnishing), the lemongrass, kaffir lime leaf, and ginger. Simmer gently on low heat for 5 minutes. (Do not boil.) Stir in the fish sauce, the Thai chili, lime juice, and the palm sugar. Turn off the heat. Taste, and add more fish sauce, lime juice, or palm sugar if necessary. Set aside.
