PARMESAN SPINACH CAKES

Recipe from Eating Well. States, "If you like spinach-cheese pie, try these simple but elegant-looking little spinach cakes." I can't wait to try them! They suggest using them as a light, vegetarian lunch. This will serve 4 as a main dish (2 per person) or 8 if you are just serving 1 to each person as a side dish.

Parmesan Spinach Cakes image

Steps:

  • Preheat oven to 400°F.
  • Pulse spinach in three batches in a food processor until finely chopped.
  • Transfer to a medium bowl. Add ricotta (or cottage cheese), Parmesan, eggs, garlic, salt and pepper; stir to combine.
  • Coat 8 cups of the muffin pan with cooking spray. Divide the spinach mixture among the 8 cups (they will be very full).
  • Bake the spinach cakes until set, about 20 minutes.
  • Let stand in the pan for 5 minutes. Loosen the edges with a knife and turn out onto a clean cutting board or large plate.
  • Serve warm, sprinkled with more Parmesan, if desired.

12 ounces fresh spinach
1/2 cup part-skim ricotta cheese or 1/2 cup low fat cottage cheese
1/2 cup finely shredded parmesan cheese, plus more for garnish (or parmesan cheese substitute, like asiago)
2 large eggs, beaten
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper

EASY QUICK-MIX GLUTEN FREE CAKE

This is the easiest cake to make- simply mix all ingredients and bake. It is a never fail recipe. This cake tastes great and never lasts long in my household. It is a light cake that tastes like a sponge. As with all GF cakes it is best eaten on the day of baking

Easy Quick-Mix Gluten Free Cake image

Steps:

  • Mix all ingredients together and use medium speed on mix master to beat for 5 minutes.
  • Line bottom of a greased round cake tin.
  • Pour mixture into tin and bake at 180 degrees for approx 30 minutes.
  • Cool in tin for 5 minutes before turning out.
  • Ice as desired or dust with GF icing sugar.
  • VARIATIONS.
  • Use orange juice and add the zest of one orange in place of the milk.
  • Use lemon juice and zest in place of the milk.
  • Add 1/4 cup of cocoa for a chocolate cake.
  • Make two cakes and sandwich with jam and cream for use as a double sponge birthday cake.

125 g butter, softened
3/4 cup sugar
2 eggs
1 cup self-raising flour, use a gluten free mix
2 tablespoons gluten-free cornstarch (cornflour)
1/2 teaspoon vanilla essence
1/4 cup milk (can substitute soy milk, lactose free or orange juice)

PARMESAN POUND CAKE WITH FRESH BERRIES

I have not tried this recipe yet but it sounds intriguing. It is adapted from a recipe from Metrovino restaurant in Portland, OR. The restaurant serves it with a coffee anglaise.

Parmesan Pound Cake With Fresh Berries image

Steps:

  • Sift together the flour, baking powder, and salt into a large mixing bowl.
  • Whisk in the Parmesan. Set aside.
  • Cream together the butter and sugar with a mixer, about 5 minutes.
  • One at a time, add eggs to the butter mixture, mixing well (at medium speed) after each addition.
  • Add cream cheese and mix until smooth.
  • On slowest speed, alternate adding the flour mixture and the crème fraîche, ending with the flour mixture. Do not overmix.
  • Butter and lightly flour two (8x8) metal cake pans or one large metal baking pan (9x12 or 9x13).
  • Pour the cake batter into the prepared pans and spread evenly. Tap the pan down sharply on the countertop a couple of times to release any air bubbles.
  • Bake at 350°F for 45-55 minutes, or until toothpick comes out clean. Let cool.
  • Invert the completely cool cake onto a cutting board, trim the edges away, and then with a serrated cake knife, cut the cake in half lengthwise. Cut widthwise into 1½-inch slices. You will end up with fourteen 4- by 1½-inch slices. (Or cut slices only as you need them, keeping the cake well sealed in plastic wrap).
  • Serve with your choice of garnishes.

CREAM CHEESE PASTRY - GLUTEN FREE

This is a very versatile pastry. It can be used for sweet or savoury pies or tarts and even as a base for a baked cheesecake. There is no need to pre-cook this pastry before filling, if using as a pie or quiche shell. It freezes well. Nobody would realise this is gluten free. It makes a beautiful golden and crisp pastry that is not crumbley. I have used this recipe to make tart shells-just use a round cutter and place into lightly greased muffin trays-Fantastic and they stay fresh for days! Cook the tart cases and then fill with caramel or lemon curd. For Easter I filled the tarts with chocolate mousse and topped them with a mini Easter Egg. This recipe uses the US. white, powdery potato starch This is a soft dough...which is the reason for the 30 minutes refrigeration. After being chilled it will be easier to use.

Steps:

  • Combine the cream cheese with the butter, stir until smooth. You can use wooden spoon to mix.
  • Add the remaining ingredients. Mix well. Using a clean or gloved hand towards the end of the mixing will quicken the process and bring the mix together quickly.
  • Chill the dough for 30 minutes in the refrigerator and then use as required. If the dough is a little stiff, knead lightly and it will become more pliable.
  • Roll out between sheets of baking paper as this stops the pastry from clinging to the work surface and your rolling pin. It also eliminates the need to use extra flour when rolling the dough.
  • Cook at the temperature required for your recipe. I have found that there is no need to grease or spray the tins/bakeware.
  • The pastry cases I have cooked at fanforced 180°C for about 30 minutes.

Steps:

  • Preheat oven 170 C (325 F), grease an oven proof baking dish.
  • Steam cauliflower until tender, about 15 minutes.
  • Saute beef until brown, add cumin, salt and pepper and stir until beef is cooked, about 20 minutes.
  • Add onions and cook.
  • Remove pan from stove, add lemon juice and transfer to oven proof baking dish.
  • Mash cauliflower with butter then spread over top of baking dish.
  • Add grated cheese to top and bake for 15-20 minutes.
