HOLLY'S NEW ENGLAND BOILED DINNER
A few years ago, my husband Tom found this recipe in a Marjorie Standish cookbook that I had purchased. Years ago, Marjorie Standish used to write a cooking column for the Portland Press Herald here in Maine. Tom did change the recipe and I am posting his version. This could not be easier, but it does take about four hours from start to finish. This is the kind of recipe that you want on a cold day, that's why we made this yesterday. It's cold here right now and we had a craving for all of those wonderful root vegetables.

Steps:
- Any other root vegetables may be added, but if you add beets, cook them separately.
- Cover beef with water in a large pot. Bring this to a boil, and then simmer 1 hour per pound
- One hour before the beef is done, add the vegetables, and that's it!!
- When done serve with salt, pepper and butter on the vegetables. It's delicious. The turnip is incredible, and the next night you can make hash in a cast iron skillet.
BOILED NEW ENGLAND DINNER
This New England boiled dinner has been a popular dish among our family for a long time. When we moved to California in 1960, I'd make it often to remind us of the East Coast. We're back home now and continue to enjoy this scrumptious dish. -Natalie Cook, Scarborough, Maine

NEW ENGLAND BOILED DINNER HASH
Growing up we called this red flannel hash because our classic New England boiled dinner had the following: Corned Beef (red not grey) turnip carrots onions cabbage potatoes a stalk or two of celery beets (red flannel... beets make everything red!) My Sweety is not a fan of beets and turnip I don't often add because I cook for...

Steps:
- 1. You need leftover New England Boiled Dinner AKA Corned Beef and Cabbage. You can also use a New England Boiled Dinner made with smoked shoulder not corned beef. New England Boiled Dinner: Corned Beef (red not grey)OR A Smoked Shoulder turnip carrots onions cabbage potatoes a stalk or two of celery beets (red flannel... beets make everything red!)
- 2. Put everything except the corned beef on/in something you can chop on/in and not damage like a large cutting board or large square baking pan. You may need to do this in batches depending on the amount you have.... Way back when Gram & Mom had an old Spam can with the sharp edge (from when you opened the can) kicking around in the draw for this task. Because of this can they were able to use a bowl. I use the big cutting board with my dough scraper to cut the veggies. I then have to chop my corned beef on a cutting board with a knife. Make it chunky I do or fine your choice.
- 3. If you leave some fat on the corned beef you really don't need much if any butter to fry it. Fry the hash on medium (may need to turn down as you go)in a non-stick or other type fry pan till done to your liking. I cook mine until still moist but extra moisture has evaporated and hash in somewhat browned.

GRAMMIE BEA'S NEW ENGLAND BOILED DINNER
New England boiled dinner is often made with a smoked ham shoulder, and that's the way we always had it at my house growing up. The flavor is incredible and makes for a DELICIOUS meal! Some people like their vegetables firm and some like them soft and tender, so cook your veggies accordingly. The cooking time for this particular recipe is 4 hrs. for an 8 lb. ham, or 5 hrs. for a 10 lb. ham. Another way of cooking veggies is, wait until ham is cooked and removed from water, then cook your veggies in the water in the kettle to the desired doneness. Sometimes I use boneless ham and add turnip and beets, just like in the photo I posted. Yummy!!

Steps:
- Place ham in a large dutch oven style kettle.
- Cover with cold water, and fill to about 2" above top of ham. Cover kettle, and bring to a boil using high heat.
- Turn down to med-high and let boil a few minutes, then drain water, and refill with water 2" above ham, and bring to a boil again over high heat. This method is used to make the ham less salty. (Or you may refrigerate ham overnight in water, and change water several times before cooking instead).
- Once water comes to a boil, turn heat down to med. to med-high making sure it keeps boiling. Keep cover on kettle while cooking.
- Add peeled onions to the kettle.
- Cook ham 1/2 hour per pound of ham.
- Add some water to the kettle, when it starts getting low.
- Peel and cut potatoes and carrots.
- Wash and core cabbage, then cut into wedges.
- Add vegetables during the last 30-40 minutes of cooking time. Serve when veggies are tender, or to your liking.

- Place corned beef and any liquid from the bag into an 8 quart pot and fill with cold water. Bring to a boil and skim off foam that floats to the top. Reduce to a medium simmer and cook uncovered for three hours, replacing hot water every 30 minutes or so to keep water to the top. After three hours, let sit in water off burner for 15 minutes then remove to a sheet tray. The spice bag mix does not get used while the corned beef is cooking. Corned beef has enough flavor on its own and you want the taste of the meat to shine.
- OK, here is trick number one. In food service, we would cook the corned beef the day prior, place in the cooler with a heavy weight on top and the next day, any grains of heavy fat intermingled throughout the meat would be squeezed out yielding a less fatty looking slice. To do this at home and to show the difference, I cut the cooked roast in half and left one un-pressed and pressed the other by putting a second sheet pan over the top and topping with a heavy Dutch oven filled with some water. That whole set up is then placed in the refrigerator overnight. This step is not totally necessary but I wanted to show the difference. Once the meat is hot, you really can’t see the fat and as a bonus, fat tastes good. So this is your choice here.
- There should be about 6 quarts of liquid left in the pot and this will be flavored now with the spice bag.
- Lay out a double layer of cheese cloth and fill with peppercorns, cloves, bay leaves, mustard seeds, coriander seeds, all spice berries, fresh ginger, cinnamon stick and pepper flakes. Pull up sides and tie with butchers twine. (Alternately, you can just use a commercial pickling spice mix).

- Bring to a boil and reduce to a simmer, simmer for 2 – 3 hours with lid on, in 1 gallon water to 1lb meat. 5 lbs meat, 5 gallons of water, or cook for 1.5 hours, dump water and begin again
- Once the meat is tender, or an internal temperature of 195, remove the meat, add vegetables. Another method is to time the cooking of meat and add vegetables towards the finishing of the meat. Remove the meat and vegetables, add cabbage to the pot because this takes up too much space to cook with everything else.
