OLD DOMINION NUT CAKE
An old fashioned Southern Style nut cake. Like fruit cake, this will last several weeks covered in aluminum foil. It has lots of nuts. It is a nut lovers dream.

Steps:
- Preheat oven to 275°F.
- Coat raisins and nuts with flour and set aside.
- Cream butter and sugar, then add eggs one at a time.
- Add molasses and spices, then add floured nuts and raisins.
- (Note: if not using raisins you may wish to add extra nuts) Last add whiskey and soda mixture.
- Bake in large bundt pan lined with waxed paper for 3 to 3 ½ hours over a pan of water set on the oven floor.
- Keeps for weeks wrapped in aluminum foil.
- For a Christmas cake that will last even longer wrap cake in cheesecloth dampened with Bourbon and then in foil and store in a cool place. Check Cheese cloth at least once a week and dampen again as needed.

Steps:
- Preheat oven to 350°F.
- In a small bowl or container, mix together granulated sugar and ground cinnamon and set aside.
- In another small bowl mix together the walnuts, cherries and 2 tablespoons of flour to coat. This will prevent them from sinking to the bottom of the cake. Set aside.
- Cream together the sugar and margarine.
- Beat in vanilla and almond extracts and eggs, one at a time.
- Beat in sour cream and buttermilk.
- Sift together: flour, baking powder, baking soda and salt, and add to wet ingredients.
- Fold in the nuts and cherries.
- Spray the bundt pan heavily with Pam and sprinkle evenly with sugar/cinnamon mixture.
- Pour in the batter.
- Bake for 27 to 35 minutes on middle rack, until toothpick inserted in centre comes out clean.
- Cool 10 minutes in pans before removing to wire rack.

NO-BAKE CHEESECAKE WITH SOUR CREAM
This no-bake cheesecake with sour cream is very simple and easy. When a dessert is needed quickly, this one is quick to make. Everyone seems to like it. It doesn't matter whether I provide toppings or keep it plain. This one is a success at my house and church gatherings.

GRANDMA'S HICKORY NUT CAKE

- For the Cake: Cream together sugar and butter. Add eggs; beat on medium speed of mixer for 2 minutes. Mix dry ingredients together lightly with a fork. Add dry ingredients alternately with milk. Mix well. Stir in vanilla and nuts. Pour into a greased and floured 13x9-inch pan (or 2 8-inch round cake pans). Bake at 325 F for 45--50 minutes. Cool.
- For the Frosting: Make frosting by melting butter in a medium saucepan. Add brown sugar; boil 2 minutes. Add milk; bring to a boil. Remove from heat; cool to lukewarm. Beat in sugar and vanilla. (You may add 1/2 cup chopped hickory nuts if desired.) Frost the cake and decorate with reserved hickory nuts.

WHIPPING CREAM CAKE
My favorite cake recipe is Whipping Cream Cake. It's a variation on the pound cake I fell in love with in the corner delis in New York sold by the slice wrapped in celophane. It's fancy enough for company with raspberry sauce and extra whipped cream, or great just plain in my lunchbox the next day.

- Cream butter and sugar in mixer bowl until light and fluffy.
- Add the eggs, flour, and whipping cream-mix well.
- Stir in flavorings.
- Spoon into a greased and floured bundt pan.
- Bake at 325 degrees for about an hour or until cake tests done. Cool in the pan for several minutes.
- Invert onto a wire rack to cool completely.
- Garnish with powdered sugar, berry sauce, ice cream, or whatever strikes your fancy.
- It is also excellent "unadorned."

OLD FASHIONED BUTTER NUT CAKE
This cake is divine and NOT HEALTHY. :-) This recipe came from my aunt, who got it from my grandmother. (She died before I was born and was making this cake in the 40s and 50s, according to my dad).

- 1. Cream crisco and mix in sugar
- 2. Add eggs, one at a time and beat
- 3. Mix flour together and add to mixture
- 4. Add milk and flavor. Beat and pour into a bundt pan sprayed with cooking spray (such as Pam) or two round cake pans.
- 5. Bake at 325 for one hour.
- 6. Cream butter until fluffy. Add part of the powdered sugar and beat. Continue adding sugar and milk in small batches and beat until very fluffy. Stir in flavoring. Frost/Ice your cake.

- Preheat oven to 350°. Cream butter, shortening and granulated sugar. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; gradually add to creamed mixture alternately with buttermilk and vanilla. Beat on low speed just until combined.
