Shallot Butter image

Steps:

  • In a small saucepan set over medium heat or cooler area of a grill, combine butter, shallots, and oregano; melt. Stir in the wine and lime juice. Set butter aside until ready to use.

1 cup (2 sticks) unsalted butter
2 shallots, finely chopped
1/4 cup fresh oregano leaves
1/2 cup dry white wine
4 tablespoons freshly squeezed lime juice (2 limes)

Steps:

  • Combine butter and shallots in small saucepan. Stir over low heat until butter melts. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Before using, stir over low heat until butter melts; keep warm.)

Shallot- Butter Sauce for Seafood BBQ image

Steps:

  • Put 2 tbsp butter in fry pan and sauté the shallots until transparent& golden 5 minutes.
  • Whisk in the beer, vinegar, lemon juice& cayenne.
  • Heat 2-3 minutes until bubbly and kind of syrupy.
  • Cut remaining butter into table spoons and over very low heat (barely warm) adding a tbsp at a time whisking it into the sauce.
  • Add the next piece only after the previous one has melted inches.
  • Remove sauce from heat and whisk in the hot sauce and parsley.
  • Season with salt and pepper.
  • Serve the sauce barely warm with your favorite seafood.

1/2 lb very cold butter
1/3 cup shallot, minced
3 tablespoons beer
3 tablespoons cider vinegar
2 tablespoons fresh lemon juice
1/2 teaspoon cayenne pepper
12 drops hot pepper sauce (I use Peri-Peri)

Steps:

  • Top, tail and remove the strings from the runner beans, then cut them diagonally into elongated diamond shapes.
  • Melt the butter with the oil in a medium-sized frying pan over a low to medium heat. Tip in the shallots and fry them gently for about 8 minutes, or until soft and very slightly coloured. Stir occasionally.
  • Meanwhile, bring a saucepan of salted water to the boil and cook the beans for 3- 4 minutes until just tender. Drain well.
  • Turn up the heat under the frying pan and add the sugar and vinegar to the shallots. Stir well and then leave to bubble for 1 minute. Toss the beans and the buttery shallots together, either in the frying pan or saucepan, depending on size. Serve in a warmed dish.

Steps:

  • Combine shallots and wine in a small saucepan. Boil, and cook until liquid evaporates being careful not to burn shallots. Remove from heat and allow to cool about 3 minutes, stirring occasionally.
  • Add butter and olive oil to saucepan and whisk until it becomes thickened. If the pan is too hot the butter will curdle. Serve.

Steps:

  • In a small saucepan of boiling water boil the garlic cloves for 6 minutes, drain them, and peel them. In a small heavy skillet heat the oil over moderately high heat until it is hot but not smoking and in it fry the shallot for 3 to 5 minutes, or until it is golden. Transfer the fried shallot to paper towels to drain. In a small bowl mash the garlic to a paste, add the fried shallot, the butter, and salt and pepper to taste, and cream the mixture. Let the butter stand, covered, in a cool place for 1 hour to allow the flavors to develop. Serve the butter with meat, poultry, seafood, or vegetables.
