Steps:
- Cook the beef in a large pot; drain well when done.
- *you can add the onions if you like, I don't always use them.
- stir in can of re-fried beans and approx 3/4 to half of the salsa (leave some for topping).
- add some cheddar cheese, I usually add approx 1 cup (leave some for topping).
- add salt and pepper to taste.
- let this mixture warm on the stove a few minutes just to melt the cheese.
- Turn off.
- Warm the shells a few at a time in the microwave on a plate with a slightly damp paper towel on top.
- Place 2 ice cream scoop sizes of meat mixture in the middle of the shell, roll up and place seam side down in a lightly buttered 9x13 pan (you will need more than one pan).
- Once you have rolled them all and placed in pans, brush lightly with butter or margarine.
- spread remaining salsa on top (I like to use lots and have some left over if anyone wants to add more).
- sprinkle with remaining cheese.
- Place in a warm oven 200-250F approx 10-15 minutes until heated through and cheese is melted.
- Serve with extra salsa and sour cream.
- This is a recipe that can be made for a small supper feeding 4-6 or can be made for 10 or more depending on how many shells you buy and the size of shells I buy large ones.
- This is very filling so I don't add anything to the meal.
- It is easy and inexpensive to make and not one person I have ever made it for did not LOVE it.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the chili, salsa and green chilies. Bring to a boil. - Mix jalapeno peppers, tomato, green chile peppers, green bell pepper, red bell pepper, onion, hot sauce, and cayenne pepper together in a large bowl.
- Cook beef in a large skillet over medium-high heat, stirring to break up clumps, about 5 minutes. Drain excess grease. Add jalapeno pepper mixture and burrito seasoning; cook, covered, stirring occasionally, until flavors combine, about 10 minutes.
- Pour refried beans into a saucepan over medium-low heat. Cook and stir until heated through, about 5 minutes.

EASY MONEY BREAKFAST BURRITOS
Yummy burritos that are so good that my husband was selling them for a buck apiece at corp school in the Navy. I was making them every night, and we bought a new couch with the money! These freeze really well; just defrost and eat. I also add fresh cooked mushrooms in these on occasion. I do find that these taste better when made ahead of time and eaten at a later time.

- Place the pork sausage and onion into a skillet over medium heat, and cook until the sausage is browned, about 10 minutes. Break the meat apart into crumbles as it cooks. Drain the excess grease.
- In a separate skillet over medium heat, melt the butter until the foam subsides, and cook and stir the beaten eggs with the chilies until softly scrambled but not wet, about 3 minutes. Transfer the scrambled eggs into a large bowl, and stir in the cooked sausage mixture.
- Place a tortilla onto a microwave-safe plate, and cook in the microwave on High setting for 10 to 20 seconds. The tortilla should be warm and pliable. Spoon about 1/2 cup of the sausage and egg mixture in a line down the the tortilla, slightly off center. Top with about 1 tablespoon of shredded cheese, and 1 tablespoon of salsa. Fold 2 opposite ends of the tortilla over the filling. Press the 2 ends down so they stay folded. Carefully roll the shorter unfolded edge over the burrito, pushing the filling to the back of the roll as you go, to snugly enclose the filling. Keep the 2 ends folded as you roll. Wrap in foil if desired. Repeat with the rest of the tortillas.

SOUTHWEST BREAKFAST BURRITOS
My wife and I love eating Mexican so I came up with this recipe so that we could have a little more variety in our morning meals. We are busy people and don't have time to make elaborate meals in the morning. In the past we have bought frozen breakfast burritos, but they are not very tasty and I knew they could be improved upon. This recipe will make a large batch of the burrito fixins that you can freeze, or store in the refrigerator so that you can make great breakfast burritos whenever you please.

- Whisk together the eggs, milk, and salt in a large bowl. Heat butter in a large skillet over medium-high heat. Pour in the egg mixture; cook and stir until eggs are completely set, about 5 minutes. Chop the cooked eggs and place in a large bowl. Set aside.
- Heat a large skillet over medium heat and stir in the sausage and garlic. Cook and stir for 5 minutes, then add the onion. Continue cooking and stirring until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Combine the sausage with the eggs, tomato, cilantro, jalapeno, and taco seasoning. Allow mixture to cool to room temperature, then stir in the Cheddar cheese.

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving 2 tablespoons drippings; set sausage aside. Preheat oven to 350 degrees F (175 degrees C).

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, and green chiles in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease. - Heat oil in heavy large pot over medium-high heat. Add half of beef and sauté until brown, about 3 minutes. Using slotted spoon, transfer beef to bowl. Add remaining beef to pot and sauté until brown, about 3 minutes. Return beef in bowl to pot. Add salsa, broth, garlic, sugar and soy sauce to pot; bring to boil. Reduce heat to medium-low, cover pot and simmer stew until beef is tender, stirring occasionally, about 1 hour 10 minutes.
- Uncover pot and simmer stew until sauce thickens, about 5 minutes. Mix in cilantro and lime juice. Season with salt and pepper. (Can be made 2 days ahead. Refrigerate until cold; then cover and keep refrigerated. Rewarm before continuing.)
- Heat tortillas 1 at a time on gas or electric burner, about 10 seconds Per side, turning with tongs. Cover with foil or napkin to keep warm.

- Preheat oven to 350°F (175°C).
- Combine shrimp and shredded lobster/crab meat and mix well.
- Reserve 1/4-1/2 cup shredded cheese to top enchiladas with.
- Warm each tortilla before rolling (I put each one in the microwave on HIGH for 14 seconds) lay warmed tortilla on a flat surface.
- Place approximately 3/4 cup of seafood mixture across bottom third of tortilla; sprinkle some cheese on seafood mixture.
- Roll tortilla to halfway point carefully tucking seafood mixture inside.
- Fold in each side and finish rolling tortilla.
- Place rolled tortillas side by side in a 9x13-inch baking pan.
- When all tortillas have been rolled (enchiladas) and placed in pan, pour enchilada sauce over all of the enchiladas.
- The sauce should cover the enchiladas completely.
- Sprinkle the chopped green onion then the remaining cheese over the top of enchiladas.
- Cover and bake at 350°F (175°C) for 30 minutes.
- Uncover and cook an additional 15-20 minutes.
- Serve hot garnished with sour cream and additional green onions if desired.
