Steps:

  • In a food processor, add the shrimp, pork, soy sauce, sesame oil, cornstarch, salt, pepper, garlic, egg whites, ginger, green onions and lemon juice. Process until partly smooth but not completely pureed (it should have a little texture).
  • Hold a wonton wrapper in your hand. Dip a tablespoon measure in cold water and then scoop 1 tablespoon of the filling onto the center of a wrapper (dipping the spoon in cold water first will make the filling come off easier). Lightly moisten the edge of the wrapper with some water and fold over to form a half moon. Holding the edge in your hands, crimp and pinch around wrapper to create a fluted edge. Flatten the bottom so that the edge is facing upwards. Repeat for the remaining filling and wrappers.
  • Heat a saute pan over medium-high heat and add the peanut oil. Add the gyoza flat-side down to the pan, and cook until toasted, 2 to 3 minutes. Remove the pan from the heat and add 1/4 cup water. Return the pan to the heat and cover with a lid. Remove the lid and cook until the water evaporates and the gyoza are golden brown and crispy. Serve hot with soy sauce for dipping.

1 pound shrimp, shelled and deveined
8 ounces ground pork
1 tablespoon low-sodium soy sauce, plus more for dipping
1 tablespoon sesame oil
1 teaspoon cornstarch
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 cloves garlic, minced
2 egg whites
One 2-inch piece fresh ginger, grated
1 green onion, finely chopped
1/2 lemon, juiced
One 10-ounce package round wonton wrappers
2 tablespoons peanut oil

Shrimp and Vegetable Potstickers image

Steps:

  • In large skillet or a wok heat the vegetable oil until hot. Add the shrimp, onion, carrot, cabbage and mushrooms and quickly stir fry while combining the ingredients. Add the pepper flakes, sesame oil, soy sauce, vinegar and sugar, adjust the seasoning and pour out onto a cookie sheet to cool. When the mixture is cool, begin making the potstickers. Lay out one wonton, brush the edge with water and put 1 teaspoon of the filling into the middle of the wonton. Fold the edge over on the diagonal to form a packet. Trim the edges to eliminate any square corners. Dust the finished potstickers with a light coating of cornstarch to prevent sticking before cooking. Potstickers may be frozen at this point.
  • Using a bamboo steamer over a wok or pot, heat 1 cup of water to a boil. Place the potstickers in the oiled steamer basket and steam them until the dough becomes translucent, about 3 minutes. Remove from the basket and proceed to the skillet cooking process.
  • Heat a non-stick skillet with 3 tablespoons vegetable oil. When the pan is hot, add enough potstickers to cover the bottom of the pan, but do not crowd them. Cook both sides until well browned and crisp. Continue in this manner until all of the potstickers are cooked. Keep them warm in a low oven while finishing the last batches. Serve with sweet mustard dip.
  • Sweet mustard dip:
  • Combine water, honey, vinegar, soy and mustard in a saucepan over low heat. Cook for 3 to 4 minutes to blend the flavors. Remove from the heat, let cool for several minutes until just warm and serve with potstickers.

2 tablespoons vegetable oil
1/2 pound raw shrimp, peeled, deveined and roughly chopped
1/2 cup chopped white onion
1 large carrot, finely chopped (about 1/3 cup)
1 cup chopped green cabbage
1/2 cup shiitake mushroom caps, thinly sliced and chopped
1/2 teaspoon dry chili pepper flakes
2 tablespoons sesame oil
1/4 cup low sodium soy sauce
3 tablespoons rice wine vinegar
3 tablespoons sugar
Salt and pepper to taste
1 package wonton wrappers, preferably round
1/4 cup water
1/2 cup honey
2 tablespoons rice wine vinegar
1 tablespoon low sodium soy sauce
1/4 cup hot mustard

GYOZA SAUCE

The addictive Gyoza (dumpling) sauce is usually sold premade in bottles at the Asian food store. We love it so much, and go through it so quickly, that I had to find a recipe to make at home. This is a very basic recipe, so feel free to adjust amounts to your taste, or add ingredients like garlic, ginger, wasabi & green onions. If the sauce has too much "bite" from the vinegar, add a pinch of sugar. This is also good with a splash of hot chili oil, if you're so inclined. Enjoy!

Steps:

  • Mix all ingredients.
  • Stores well in the refrigerator for months.
  • Please Note: If you add fresh ingredients (like ginger or garlic), you may only be able to store the sauce for a week or two.

1/3 cup soy sauce (we like the low-sodium variety)
1/4 cup rice wine vinegar
1 tablespoon sesame oil
Tabasco sauce or hot sauce (We use sriracha)
1 pinch sugar (optional)

GYOZA

I learned this recipe for pot stickers while living in Japan. They're great hot or cold, and may be eaten plain or with the dipping sauce. Any ground meat can be substituted for pork.

Steps:

  • Heat sesame oil in a large skillet over medium high heat. Mix in cabbage, onion, garlic and carrot. Cook and stir until cabbage is limp. Mix in ground pork and egg. Cook until pork is evenly brown and egg is no longer runny.
  • Preheat vegetable oil in a large skillet over medium high heat.
  • Place approximately 1 tablespoon of the cabbage and pork mixture in the center of each wrapper. Fold wrappers in half over filling, and seal edges with moistened fingers.
  • In the preheated vegetable oil, cook gyoza approximately 1 minute per side, until lightly browned. Place water into skillet and reduce heat. Cover and allow gyoza to steam until the water is gone.
  • In a small bowl, mix soy sauce and rice vinegar. Use the mixture as a dipping sauce for the finished wrappers.

From foodandwine.com
  • In a skillet, heat 1 tablespoon of the oil. Stir-fry the shiitake, asparagus and shallot over high heat until softened, about 8 minutes. Transfer to a bowl to cool. In a food processor, pulse half of the shrimp until smooth. Coarsely chop the remaining shrimp. Add all of the shrimp to the vegetables with the oyster sauce, cilantro, scallion and salt.
  • Working in batches, lightly brush the edges of the gyoza wrappers with water. Spoon a scant tablespoon of the filling in the center of each wrapper and fold in half, pressing to seal. Arrange the gyoza on a wax paper–lined baking sheet, seam side up, and cover with a damp paper towel.
  • Divide the remaining 1/4 cup of oil between 2 large nonstick skillets. Arrange the gyoza in the skillets seam side up in 2 concentric circles without touching. Cook over high heat until the bottoms are lightly browned, 2 minutes. Add 1/2 cup of water to each skillet, cover and cook until the water has evaporated and the dumplings are cooked through, about 5 minutes. Uncover the skillets and cook until the gyoza bottoms are browned and crisp, about 1 minute. Transfer the gyoza to a plate and serve.

From rasamalaysia.com
  • Cut the shrimp into small pieces. Combine the shrimp, scallion, salt, rice wine, sesame oil, corn starch, ground white pepper in a bowl, stir and mix well to form a sticky filling.
  • Place a piece of wrapper on your palm and spoon about 1 heaping teaspoon of the filling onto the wrapper. Do not overfill. Dip your index finger into a small bowl of water and circle around the outer edges of the wrapper. Fold the potsticker over to form a half moon shape and pleat and pinch the folds, as pictured below. Finish by pressing the edges with your thumb and index finger to ensure that the potsticker is sealed tightly and there is no leakage. Place the potsticker on a floured surface or baking sheet. This will avoid the potstickers from sticking to the surface.
  • Using a non-stick skillet (preferred) to pan-fry the shrimp potstickers. Add 1 tablespoon of oil on medium-low heat, then arrange half of the potstickers on the skillet. Pan fry the potstickers until the bottom turns golden brown and crispy. Add 1/2 cup of water and cover it with the lid. Steam the potstickers until the water completely evaporates.

Pinch to secure tightly. Repeat the same to make the pleats. (Start with 3-4 pleats if you are a beginner). A nicely wrapped gyoza should have a crescent shape.

WHAT TO SERVE WITH POTSTICKERS: 13 ASIAN SIDES - INSANELY GOOD

From insanelygoodrecipes.com
  • Vegetable Stir Fry. Give your dumplings a colorful companion by serving them with a vegetable stir-fry. It’s a simple dish comprising various veggies flavored with garlic, ginger, and soy sauce.
  • Fried Rice. Rice is a staple in Asian cuisine. Rich and sauce-based dishes are usually served with steamed white rice, but for dry dishes such as potstickers, fried rice is best.
  • Fried Green Beans with Garlic Sichuan Sauce. I don’t know about you, but I’m not a huge fan of green beans. Sure, they’re crispy, but they also taste like grass.

PORK AND SHRIMP GYOZA - A SUE CHEF
Pork and Shrimp Gyoza. December 16, 2011 By Suzanne Bruno Leave a Comment. What I love about my mom and Jon is their obsession with ethnic food. I used to be really picky, and if it weren’t for them I would have never tried anything new. Papa Bear Bruns loves Cajun and Italian food, of course, so that only aided my food bias. But when my mom would only cook …
