What to do with that leftover Easter ham bone? Try this tasty soup that is created from a ham stock, to use now, or later. Use your favorite dried white beans. My choice is Great Northern.

- Combine ham bone and 4 quarts of water in a large stock pot of Dutch oven at least the night before. Bring to a boil, cover, reduce heat and simmer for 10 to 12 hours.
- In the meantime, place beans in a large pot with water to cover; soak overnight. Drain beans the next day and return to the pot.
- Remove ham bone from the pot and pick off any edible meat. Strain the stock and measure out 3 quarts for the soup. Remaining stock can be frozen.
- Pour 3 quarts of stock over the soaked beans. Add ham, celery, carrots, onion, and garlic. Season with salt and pepper. Bring soup to a boil, then reduce heat to a simmer. Cover, tilting the lid to allow steam to escape, and simmer until beans are tender, 1 1/2 to 2 hours. Add sherry in the last 30 minutes of cooking and season with salt and pepper.
- Ladle soup into bowls and sprinkle with fresh parsley.

BASIC HAM AND BEAN SOUP
Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

- Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
- After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
- Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

- Place bean mix into a large bowl and cover with several inches of water; soak for at least 24 hours. Drain completely.
- Bring chicken stock to a boil in a pot large enough to hold the beans and, eventually, the ham bone. Add the soaked beans; reduce heat and simmer until tender, about 1 hour.
- Bring stock and beans back to a boil. Add ham bone, onion, carrots, celery, garlic, and bay leaves. Reduce heat to low and simmer until vegetables are soft, about 1 hour. Add chopped ham, liquid smoke, and mustard powder. Stir and let simmer until flavors blend, about 30 minutes more.
- Remove ham bone from the soup. Season with salt and pepper.

SCRUMPTOUS & SIMPLE HAM & BEAN SOUP (NO GAS)
This is a long time favorite in our family, my wife & I grew up with "old fashioned ham & beans" as a staple with our families. We've added the brown sugar recently & find it a good addition as long as it's not overdone. There's no special preparation tips, even I can do this easily! We always use a 6 qt. pressure cooker for ham & beans, a slow cooker or large pot on stove top will work well, but for simplicity and overall "top of the line taste", nothing beats a pressure cooker! With all ingredients added, the lid placed on and pressure up to 15 lbs. it's 40 to 45 minutes to "ready to eat"! Preparation is very simple & uncomplicated. Go to your local butcher shop and ask for pork leg shanks, pork hocks will work (although they don't have enough meat for us) & of course, a chunk of bone-in ham is excellent. The key is, get as much bone as you can, this is the magic in "great ham & beans"! The leg shanks are perfect because of the leg bones, they're usually 10 to 12 in. long, have the butcher cut them in half or you can do it at home with a meat saw, this exposes more bone ends & marrow (the flavor catylist). If they're good shanks two or three will do a large pot of ham & beans. We like brown pintos & white great northerns, we use a 50/50 mix, any bean combination will work fine, "Don't stir the pot too much"or the white beans will become "mushy", doesn't hurt but beans should be whole. **Soak beans overnite in water with 1/4 cup of vinegar (Key ingredient for "removing gas") Have the beans well covered with water for soaking-remember they expand quite a bit and you don't want them to expand above the water level.

- After soaking beans overnite in water & 1/4 cup vinegar, drain & place in cooker, add chicken broth & water to cover beans apoproximately 1 to 2 inches, then simply add all the ingredients, no order, just dump! No salt should be added, the uncooked beans don't like it, the ham will usually supply all the salt you need, if not, use a little sea salt or kosher after cooking. If using a pressure cooker (highly recommended) place on hot burner, cook at 15 lbs. pressure for approximately 40 minutes, can vary a few minutes on amount of ham in pot but not much. It's ready to eat! You'll be pleasantly surprised with the flavor, it's "simply delicious"! You will also be pleasantly surprised that there is "absolutely no gas"! If more juice is desired simply add some water, the juice is "fantastic"!

LEFTOVER HAM BONE SOUP
Great for fall! If you have a leftover ham bone and a couple of kitchen basics, this soup is easy to prepare and serve. Nothing fancy to it!

- Fill a large soup pot with enough water to cover the ham bone, but don't add the bone yet. Bring to a boil.
- When boiling, add bouillon cubes and salt. Crush bouillon with a spoon until dissolved, then add ham bone, potatoes, onions, kidney beans, turmeric, and cloves. Stir to blend spices and return to a boil.
- Lower to medium-low heat and simmer until ham is hot and potatoes are easily pierced by a fork, about 1 hour.
- Remove ham bone. Shred meat and discard bone. Return meat to the soup, and serve.

- Put rinsed beans in pan and cover up to 2 inches past beans in large pot -- let sit overnight.
- Drain, put beans back in pot, add water and the rest of ingredients.
- Bring to boil, turn to simmer and cover.
- Simmer for at least 3 hours or until beans are soft.
- Take out bones and dice up any meat on bones and put back into pot -- You can add more ham if you want.
- Discard fat and bones.
- Season to taste with pepper and salt and parsley.

MOM'S HAM BONE BEAN SOUP
This is the bean soup my mom used to make whenever we'd finished a ham -- using the ham bone makes a wonderful stock for the soup. Enjoy!

Steps:
- Soak beans according to package directions, either overnight, or quick 1 hour soak. Drain and rinse beans.
- Add water, ham bone and broths to beans in stockpot. Cut 1 stalk of celery into 3 pieces and add to beans along with chopped onion and bay leaves. Bring to boil, cover partially, lower heat and simmer 90 minutes, or until beans are tender. Remove bay leaves and celery.
- Add tomatoes, chopped carrots and other two stalks of celery, chopped finely. Remove bone and take off any remaining ham and chop finely. Add additional ham if needed to make 2 cups and add to soup.
- Use a potato masher or immersion blender to blend slightly, thickening the soup with the mashed beans.
- Great served with a dolop of horseradish.
