Steps:
- Heat oven to 180C/160C fan/gas 4.
- Butter a 2lb loaf tin and line the base and sides with baking parchment.
- Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
- Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
- Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
- Cool in the tin for 10 mins, then remove to a wire rack.
- Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
- Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

Steps:
- Preheat the oven to 180C/gas 4. In one, big mixing bowl, cream the butter and sugar together untill smooth. Then in another, smaller bowl, beat the eggs. Pour the eggs into the big bowl and mix. After that, in a different bowl, mash all of the bananas untill you have a paste. Add everything into the same bowl. Make sure that when you put in the bananas and flour, alternate one spoonful of flour and one of bananas. Add the chopped nuts. (the nuts don't have to be chopped, but it makes the mixture easier to mix.) Pour the mixture into a lined 10inch loaf tin. Heat in the oven for about 40-45 minutes untill firm. When you take it out of the oven, leave it to cool for about 30 minutes. Enjoy!
