- Preheat oven to 350 degrees F (175 degrees C).
- Mix sugar, flour, nutmeg, and cinnamon together in a bowl.
- Pour peaches into the bottom of a glass 9x13-inch baking dish. Sprinkle sugar mixture over peaches and mix well. Scatter 1/2 of the butter chunks over the peach mixture. Arrange pastry strips over peach mixture in a crisscross or striped pattern. Scatter remaining butter chunks over pie pastry.
- Bake in the preheated oven until crust is golden brown and crisp, 30 to 40 minutes.

- Preheat oven to 350 degrees F (175 degrees C.) In a large bowl, combine sliced peaches with juice, 2 tablespoons melted butter, a pinch of cinnamon and a pinch of nutmeg. Dissolve cornstarch in water, then stir into peach mixture; set aside.
- In another bowl, combine milk, sugar, flour, baking powder and salt. Beat until smooth - mixture will be thin.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
SIGNATURE PEACH COBBLER
This recipe is, quite simply, the best peach cobbler I have ever eaten - period. It has ruined me for any others. I got it from Allrecipes, submitted by Amy Posey. I will forever be in her debt! I made it once for a neighbor who has a peach tree (in exchange for peaches!), and he said it was just like his Mom used to make. A classic. I guarantee you will not be disappointed. I suppose it could be made with frozen peaches, but for me, it's only worth making at the very peak of peach season. Enjoy!

- Preheat oven to 425. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar and cinnamon, nutmeg, lemon juice and cornstarch. Toss to coat evenly and pour into a 2 quart baking dish. Bake for 10 minutes.

- To make the filling: In a large bowl, toss peaches with lemon juice. Add all other ingredients and toss evenly to coat. Transfer mixture to prepared baking dish and spread evenly. Set aside.
- To make the topping: Place flour, sugar, baking powder, baking soda, and salt in a medium bowl and mix to combine. Add butter and crumble the ingredients in a bowl using a pastry cutter, your fingertips, or a fork until it resembles coarse meal and there are no longer large pieces of butter. Add buttermilk and vanilla and mix until evenly combined (I use a wooden spoon). Place large spoonfuls of dough over the filling in the baking dish and then gently flatten them. It doesn't need to be perfect, some of the filling can be showing, and it will spread during baking. Lightly brush the dough with cream or milk and sprinkle with sugar.
- Bake for 40-45 minutes, until juices are bubbling, and a toothpick inserted into the biscuit topping comes out clean. The topping should be golden brown, but if it browns too much while baking and the topping is still not cooked through, cover the baking dish loosely with aluminium foil. Allow to cool for a few minutes on a wire rack until warm. Serve warm with ice cream or whipped cream.
