Steps:
- Heat olive oil in a large nonstick skillet over medium-high heat; add turkey, onion and green pepper. Cook until vegetables are tender and turkey is no longer pink. , Stir in the tomato sauce, macaroni, water and picante sauce. Bring to a boil. Reduce heat; cover and simmer until macaroni is tender, 10-15 minutes. , Divide between 2 plates; top with cheese, tortilla chips and avocado. Serve with lettuce and sour cream if desired.

BEEF TACO SKILLET

Steps:
- 1. Spray large skillet with cooking spray. Heat over medium-high heat. Place tortilla pieces in skillet. Cook 4 minutes or until lightly browned. Remove from skillet.
- 2. Cook ground beef in skillet until no longer pink; drain. Stir in drained tomatoes, corn and beans. Bring to a boil. Simmer 2 minutes or until hot. Add tortilla pieces and stir to coat.
- 3. Sprinkle with cheese and green onions. Cover. Let stand 5 minutes or until cheese is melted. Serve with sour cream, if desired.
LIGHTER TACO SKILLET

- Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more.
- Meanwhile, lightly char the tortillas over an open flame. Set aside wrapped in a clean kitchen towel to steam.
- Spoon the turkey mixture onto the tortillas and serve with diced tomato, avocado, radishes, queso fresco, cilantro leaves, lime wedges and sour cream.
SKILLET TACO SUPREMO
Steps:
- Using a large skillet, cook the cubed pork over medium-high heat for 8 - 10 minutes, until browned and partially cooked. Add refried beans and salsa, stirring until blended. Cook until mixture reaches a near boil, then lower heat and simmer, stirring frequently to keep pork from sticking to the skillet. Check the pork for doneness in 6 - 10 minutes (there should be no pink in the center of the cubed meat). Remove from heat. Add tomatoes, chips and cheese, in that order. Cover just long enough to melt cheese. Add sour cream, lettuce and olives. Serve immediately.
SKILLET TACO BAKE
Steps:
- Heat the oil in a large cast-iron skillet over medium-high heat. Add the onion, red pepper and poblano and cook until softened, about 5 minutes. Add the ground turkey and cook, breaking apart with the back of a wooden spoon, until no pink remains, about 10 minutes. Add the chili powder, salt, garlic powder, onion powder, oregano, cumin, red pepper flakes, paprika and cayenne and stir to combine. Add the fire-roasted tomatoes, corn and black beans and bring to a simmer, then reduce the heat to low and simmer until the liquid has reduced slightly, about 10 minutes.
- Sprinkle the cheese over the top of the skillet, then cover and turn the heat off. Let sit for a few minutes for the cheese to melt from the residual heat.
- Serve right from the skillet with garnishes of avocado, scallions and cilantro and with tortilla chips alongside.
DELICIOUS NACHOS SUPREME
Perfect party food! --- this is one of my all time favorite nacho recipes that I have made many times in the past, and I guarantee you will love this! --- all amounts may be adjusted to taste and double the recipe if desired but keep the garlic no more than 2 tablespoons, if you really want to go all out add in a can of drained black beans to the ground beef mixture! 1/2 pound Italian sausages with casings removed can be mixed with the ground beef if desired, to turn up the heat use a package of taco seasoning mix or spicy salsa and add in cayenne or dried chili flakes --- for the best flavor make certain to brown the meat well :)

- In a large skillet cook the ground beef with onions, garlic, jalapeno peppers, green bell pepper and chili powder; cook stirring until meat is no longer pink; drain all fat well, continue to cook until the meat is well browned (the beef must be well browned!).
- Add in refried beans, salsa; cook stirring until heated through.
- Add in 3/4 cup grated cheddar cheese; stir until melted.
- Place the tortilla chips on a large serving platter.
- Top with ground beef mixture, then sprinkle the top of the HOT ground beef mixture with about 1-1/2 cups (or to taste) grated cheddar cheese.
- Top with sour cream, green onions, chopped tomatoes and sliced black olives.
- Serve hot or warm.
- Delicious!

Just happened to run across a recipe in a magazine. Read it and decided to renovate it. So this is my finished keeper. This is a versatile recipe. You can make this as hot or mild as you like. You can even bake it in the oven with the cheese. This recipe does not include oven time.

Steps:
- Cook beef in a large skillet with onion till done.
- Drain well.
- Return meat to skillet and add everything except the cheese and fritos and heat till hot.
- When meat mixture is hot again add the fritos.
- When serving top each portion with cheese and your favorite taco toppings.
- Variation #1 Creamy Mexican Style.
- Stir in 1/2 cup sour cream with the soup, omit the fritos and add torn flour tortillas.
- Variation #2 Ranchero Style.
- Omit the fritos and add torn corn tortillas or broken taco shells.
- If you bake this; heat oven to 350.
- Bake for 20 minutes or till hot, shut oven off.
- Top with cheese and and place back in oven long enough for cheese to melt.

- Pour boiling water into dry TVP granules and stir. Let sit until water is absorbed, about ten minutes.
- Saute onion and garlic in olive oil until onions turn soft, about 6-8 minutes.

- Cook ground beef in a large skillet over med-high heat, stirring until beef crumbles and is not longer pink; drain well.
- Remove beef; wipe skillet with a paper towel.
- Saute onion in hot oil in the same skillet over med-high heat.
