SKINNY NO BAKE COCONUT BARS RECIPE

I decided to take a lighter route to one of my favorite flavors and whipped up these coconut bars!

Skinny No Bake Coconut Bars Recipe image

Steps:

  • In a bowl, mix together coconut, oil, vanilla, and salt until well combined.
  • Spread mixture in a 9x9" baking dish.
  • Freeze until coconut oil has set and bars harden, about 30 minutes
  • Melt chocolate until smooth and pour over coconut.
  • Return to the freezer for 30 minutes or until chocolate has set up.
  • Cut into bars and serve.

  • Line an 8 or 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
  • Pulse the dates in a food processor until they form a chunky paste. (You’ll have about 3 Tablespoons paste.) Or, if you don’t have a food processor, very finely chop the dates.
  • Whisk the date paste/chopped dates, honey, almond butter, and coconut oil together in a medium saucepan over medium heat. Try to break up the dates as much as you can. Once combined and warm, remove from heat. Stir in the vanilla extract and salt until combined.

  • Add coconut flakes, coconut oil, coconut cream, and maple syrup to a food processor. Blend until you get a wet and sticky mixture, with smaller, just slightly noticeable coconut pieces. Note: the bigger the pieces, the crumblier the bars will be.
  • Pour coconut mixture into the prepared pan. Press down and smooth until you get a tightly-packed layer. Set aside while preparing the chocolate layer.
  • Use the double boiler method, or the following. In a medium, microwave-safe bowl, add Chocolate Layer ingredients: chocolate chips and coconut cream. Heat in 15-second increments until just slightly softened and melted, being careful not to burn. Stir thoroughly in between heating increments, until smooth.
