- Place beans in a 5-qt. slow cooker. Mix remaining ingredients; pour over beans and toss to coat. Cook, covered, on low until heated through, 2-3 hours. Serve with a slotted spoon.

GREEN BEANS SLOW-COOKED WITH BACON AND ONIONS

Steps:
- Heat a heavy bottomed pot over medium high heat. Add the olive oil, bacon, and onions and cook until the onion is soft, about 5 to 10 minutes. Stir in the green beans and chicken stock; season with salt and pepper. Reduce the heat to low, and cook the green beans until they are soft but not mushy, about 30 to 45 minutes. Taste and adjust seasoning.
SLOW-COOKED GREEN BEANS WITH HARISSA AND CUMIN
Toss green beans with tons of olive oil and aromatics and surrender the whole thing to your oven for an hour or two until it becomes impossibly soft and caramelized.

- Place a rack in middle of oven and preheat to 350°F. Toss green beans, garlic, oil, harissa, cumin seeds, and salt in a shallow 2-qt. baking dish to combine.
- Turn garlic cut side down, then roast vegetables, tossing 2 or 3 times, until golden brown and very tender, 60-70 minutes. Let cool slightly, then add vinegar and toss to coat.
SLOW COOKED GREEN BEANS
Why make canned green beans when these are so easy and taste just like the restaurants. Make one batch and they are just as good left over. There is one thing I'm always requested to make at Thanksgiving, and this is it. I also like to cook these over a campfire.. either way works. Personally, we like these with amount of pepper as listed, but your tastes may differ. You may have to experiment with the amount of salt & pepper. You can try fresh bacon, but I find that it contains too much grease and not a lot of flavor, The bagged pre-cooked bacon pieces (like you would use for salads) works great.

- In large stock pot, add all ingredients, adding just enough water to cover green beans.

- Place saucepan over medium heat; cook and stir bacon in the hot pan until almost crisp, about 6 minutes. Add onion; cook until browned bits of food on the bottom of the pan have dissolved in the onion's juices and onion is soft and golden brown, about 5 minutes. Stir in garlic and tomato sauce. Cook until garlic has softened, about 1 more minute.
- Place green beans into a skillet and pour in chicken broth. Raise heat to high, add salt, black pepper, and cayenne pepper to beans, and bring to a simmer. Beans will begin to soften. Turn heat to medium-low and simmer for 1 1/2 hours. Stir occasionally. Add more broth or water if mixture seems dry.
- Adjust levels of salt, black pepper, and cayenne pepper to taste. Cook until beans are soft and tender, about 30 more minutes. Transfer beans and some of the pan juices to a deep serving platter.

SLOW-COOKED COUNTRY GREEN BEANS
While the cooking time may seem extremely long, this is an old-fashioned Southern means of cooking vegetables. When cooked this way, the beans are served with their "pot liquor" and cornbread to sop it up.

- Add the oil in a medium, heavy saucepan. Add the onion and saute until tender, about 3 minutes. Season with salt, pepper, and cayenne. Add the ham hocks, garlic, and beans. Add enough water to almost completely cover the beans. Bring to a boil, reduce the heat and simmer for 2 hours. Remove from the heat and serve with the cooking liquid.

Put it in the crockpot on low before you head to church, put a roast or chicken in another crockpot, and come home to a wonderful, warm Sunday dinner!

- Pour green beans into slow cooker, do NOT drain.
- Add 3/4 cup of water.
- Add salt, pepper, minced onion or onion powder as desired (remember: salt pork will add more salt to the dish, and the beans have salt already, so don't over do it! You can always add more salt before serving or at the table.).
- Add a 1/2 inch slice of salt pork (I keep mine in the freezer to use as needed).
- Preferred method: If you have time, put the crock on high & allow the beans to come to a good simmer, then reduce heat to low for 3-4 hours. If you don't have time to let them come to a simmer on high, cook them on low for about 5 hours.
