A tasty and easy noodle dish with flaked smoked mackerel and soy sauce

Steps:

  • Boil a kettle of water and tip the noodles into a large heatproof bowl. Cover them with boiling water and leave for 5 mins. Meanwhile, mix the soy sauce with the garlic, ginger and 3 tbsp of water to make a dressing. Drain the noodles, rinse under the cold tap, then drain them again. Tip into a bowl and toss in the cucumber, spring onions, half the coriander and half the dressing. Top each portion of noodles with mackerel, drizzle the remaining dressing over and sprinkle with the rest of the coriander. Serve.

I adore smoked mackerel. It's a great source of omega oils. Any thin, Asian-style noodle will work nicely in this recipe, which can be served warm or cold. I often use Vietnamese rice noodles, about the thickness of linguine.

Smoked Mackerel Noodles With Cucumber and Herbs image

Steps:

  • Mix together the soy sauce, sesame oil, ginger, birds-eye chilli (seeded to make it less hot if you prefer) and garlic along with 1 tbsp water to make a dressing.
  • Rinse the cooked noodles under cold water and return to a large bowl.
  • Toss with the onions, herbs and dressing. Put the noodles in serving dishes.
  • Skin and break up the mackerel and sprinkle it over the noodles.
  • Garnish with cucumber around the plate.

Smoked mackerel with herb & beet couscous image

Steps:

  • Put the couscous into a large bowl, pour over 150ml boiling water, then cover with cling film. Set aside for 10 mins.
  • Meanwhile, mix the horseradish into the yogurt and season. When all of the liquid has been absorbed into the couscous, uncover it, then spread it up and around the sides of the bowl to help it cool more quickly.
  • When couscous is quite cool, add the cucumber, herbs, onion, lemon juice and oil and toss well. Add the beets and toss briefly. Pile the couscous onto plates, flake a mackerel fillet into a few big pieces alongside each serving (discarding the skin), then serve with a big dollop of the horseradish yogurt. Pack the remaining couscous and mackerel into a lunchbox for the next day.

Smoked Mackerel, Cucumber, and Potato Salad with Mustard Dressing image

Steps:

  • Place potatoes in a small saucepan, and cover with cold water. Bring to a boil; reduce heat, and simmer until tender when pierced with a fork, about 12 minutes. Drain in a colander; let cool slightly. Slip off skins; discard. Cut potatoes into halves or quarters, if desired.
  • Meanwhile, make dressing: In a medium bowl, combine shallot, vinegar, and mustard. Whisk in the oil until emulsified. Sprinkle dill into bowl.
  • Add cucumber and cooked potatoes to the dressing in the bowl; season with pepper. Toss to coat evenly. Divide salad among four plates; arrange mackerel on each. Serve, garnished with greens.

Smoked Fish with Cucumber

Steps:

  • Whisk together yogurt, horseradish, mustard, and lemon juice. Season with 1/4 teaspoon salt.
  • Cut thin ribbons of cucumber with slicer, then very thinly slice onion. Toss with half of yogurt sauce.

  • heat the oil in a large pan and cook the onion and garlic until soft and transparent.

Smoked mackerel pâté with cucumber image

Steps:

  • Peel and flake the mackerel and tip into a small blender with the cream cheese, lemon zest and half the lemon juice, and pulse to make a pâté. Add the chopped dill and pulse again to mix.
  • Tip the mixture into a plastic piping bag or sandwich bag, cut off the end and pipe six thick cylinders of the pâté onto a baking tray and put in the freezer to harden for about 1 hr.
  • Remove a strip of peel from the cucumber - it's easiest with a swivel peeler, but a normal one also works - then peel 12 neat ribbons off the cucumber. Do not throw away any of the seeds or the peelings. Dice any remaining flesh, cover and put in the fridge ready to use later. Use the neat ribbons to wrap around the pâté and put in the fridge. Can be made up to 1 day ahead.
  • Tip the cucumber peelings and seeds into a blender or smoothie maker with the rest of the lemon juice, the olive oil and some seasoning. Blitz to make a thick dressing, then chill. Can be made 1 day ahead and kept in the fridge.
  • To serve, pour a little dressing onto each plate, sit a cucumber-wrapped pâté on top, neatly scatter the diced cucumber and dill fronds, and drizzle over more olive oil.
