Smoked Salmon with Fresh Dill and Capers image

Steps:

  • Melt the butter add all the flour at one time and cook until a sandy texture is achieved. Slowly add the half-and-half, mixing well, and bringing to a boil after each addition. Add the onion with the bay leaf and clove, and simmer for 45 minutes.
  • Strain before using.

1 yellow onion, diced
1 tablespoon pureed garlic
1 yellow peppers, diced
1/2 cup white wine
2 cups bechamel, recipe follows
1 cup cream
8 ounces brined smoked salmon
4 tablespoons capers, plus 2 tablespoons, fried for garnish
Salt and pepper
1 1/2 limes, juiced
1 tablespoon fresh chopped dill
Serving suggestions: over cooked pasta
Saute the onions, garlic, and yellow peppers. Deglaze the pan with white wine, add the bechamel, cream, smoked salmon, and 4 tablespoons capers. Slowly bring to a boil.
Season to taste.
Add the lime juice and fresh dill just before serving over pasta. Garnish with deep fried capers.

  • Butter 13x9 baking dish.
  • Arrange broccoli and half of green onions evenly over bottom of dish. Sprinkle with smoked salmon, Monterey Jack cheese, cream cheese pieces and remaining half of green onions. (Can be prepared 1 day ahead. Cover and refrigerate.).
  • Preheat oven to 375.
  • Mix eggs, milk, baking mix, salt and pepper in blender until smooth (or in bowl using beaters).
  • Pour batter over salmon mixture.
  • Bake casserole until just set in center, about 30 minutes.

Steps:

  • First, make the soda bread. Heat oven to 200C/180C fan/gas 4 and dust a large baking sheet with flour. In a large bowl, combine the flours, bicarbonate of soda and 1 /4 tsp salt. Pour the buttermilk, egg and honey into a jug and whisk to combine.
  • Make a well in the centre of the dry ingredients and pour in the wet mixture. Using a wooden spoon, bring the mixture together to form a dough - if it's too wet and sticky, add a little extra flour. Shape into a rough ball and place on the prepared baking sheet. Sprinkle over a little flour, make a criss-cross incision on top of the loaf and bake in the oven for 35 mins - the bread is cooked when you tap the bottom and it sounds hollow. Slide onto a wire rack to cool a little before slicing.
  • Meanwhile, using a peeler, slice the cucumber into long ribbons all the way around, but discard the seeded centre. Place in a bowl, sprinkle with a little seasoning and mix well with the dill.
  • Serve at the table with the salmon slices, capers, lemon wedges, soda bread and butter.

  • 1. Spray an 8 x 8 baking dish with non-stick cooking spray. 2. Evenly layer the Bagel Cubes in the bottom of the dish. 3. Sprinkle the Onions, Salmon, Tomatoes and finally the White Cheddar Cheese over the top of the Bagel Cubes. 4. In a medium size bowl whisk together the Eggs and Milk. Give your Pepper Mill a few turns over the mixture and whisk again. Set aside 5. Next scoop the Salmon flavored Cream Cheese into small dollops and put on top of the Cheese layer 6. Now pour the Egg mixture over the top of all, in the baking dish. Then sprinkle with the Fresh dill. 7. Cover the pan tightly with foil and refrigerate overnight. 8. In the morning, preheat your oven to 350 degrees. 9. Remove the Casserole from the refrigerator and let it sit on the counter for about 20 minutes prior to baking. 10. Place the foil covered baking dish in the oven and bake for 30 minutes. 11. Remove the foil and continue to bake for about 20-25 additional minutes. The Casserole will begin to puff up in the oven 12. All ovens cook differently so check for doneness. A knife inserted in the center should come out clean. 13. Remove the Casserole from the oven and immediately top with the Capers. Allow the Casserole to cool for about 5-10 minutes before serving. It will be piping hot! ~This is a great recipe for Breakfast or Brunch. Since you can prepare it the night before, and bake in the morning, it might be a nice dish to serve on mornings when you have guests. I served mine with a side of fresh Berries and Cream.   • Put the vinegar and sugar into a heavy-based saucepan and bring to the boil, allowing the sugar to dissolve. Add the sliced shallots to the warm liquid, stir through, then tip into a dish and cover with cling film. Set aside.
  • Arrange the smoked salmon in the centre of each plate, making sure that the slices slightly overlap, and set aside.
  • Put the frisée salad, the chives, capers, a little of the shallot vinegar and some of the shallots into a mixing bowl and toss together. Spoon the mixture over the salmon and serve with a few twists of black pepper, a drizzle of oil and lemon wedges on the side.
