SPICY FENNEL BREAD
The smell of this spicy fennel bread is still lingering in the house making me feel so cozy! A few years ago, a breakfast spot opened up downtown that started making spicy fennel bagels. As an avid everything bagel lover, I was not sure at first but was quickly convinced to give it a try. Oh my goodness, was I happily surprised. The spice given off by the fennel was perfection melted into the bagel. A bit later I moved and craved these bagels so I decided to make my own version, spicy fennel bread.

Steps:
- Combine water, yeast, and sugar in a measuring cup. Mix well.
- Combine flour, fennel seeds, salt, red pepper flakes, onion, and garlic in a large bowl. Mix well until combined and any flour clumps are broken up. Slowly pour in the yeast-water mixture and stir into the flour.
- Knead the bread by hand until dough is well combined and you have an even consistency. Transfer to an oiled bowl, cover with plastic wrap, and let rest on the countertop, 10 to 14 hours.
- Remove dough onto the counter and knead once more. Let rise, 30 minutes to 1 hour.
- While bread rises, preheat the oven to 450 degrees F (230 degrees C). Sprinkle the bottom of an oven-safe Dutch oven with flour, cover with the lid, and place in the oven while it preheats.
- Remove the Dutch oven and carefully place the dough in the pot; cover with the lid.
- Bake in the preheated oven for 30 minutes. Remove the lid and continue to bake until golden, about 30 minutes more. Remove from the oven and place on a rack to cool.

FENNEL SEED AND ORANGE PEEL BREAD
My son and daughter, both professional chefs, love the taste of fennel. They always insist that I make my fennel seed and orange peel bread when they come to visit. A bread machine will make the kneading easier, but it is not necessary. I have never used the bread machine to mix this one, as it is big enough for two loaves, and thus won't fit in my small bread maker. Hand touched is always nicer anyway. The loaves can also be braided for a nice touch.

Steps:
- Pour scalded milk over honey, maple syrup, and salt in a large bowl. Let cool to lukewarm, 2 to 3 minutes.
- Soften yeast in warm water in a bowl until frothy, about 5 minutes. Combine with milk mixture. Beat in 2 cups flour, orange zest, and fennel seeds using an electric mixer. Blend in butter. Stir in 5 cups flour to make a soft dough.
- Sprinkle last 1/2 cup flour on a board; turn dough onto floured board and knead until smooth, about 5 minutes. Place dough in a greased bowl; turn dough over to grease top. Cover and let rise in a warm place until doubled in size, about 1 1/2 hours.
- Punch dough down and divide in half. Shape loaves. Place in 2 lightly greased bread pans. Cover and let rise until almost doubled in size, about 45 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Brush tops of loaves with egg white.
- Bake loaves in the preheated oven until a toothpick or knife inserted into the center of a loaf comes out clean, about 45 minutes.

SOFT BREADSTICKS WITH FENNEL SEEDS

- In the bowl of an electric mixer proof the yeast with the sugar in 1/4 cup lukewarm water for 5 minutes, or until it is foamy. With the paddle attachment beat in 1 cup warm water, 3 cups of the flour, the salt, the fennel seeds, and the pepper and beat the dough until it is smooth. With the dough hook of the electric mixer or by hand knead the dough, kneading in enough of the remaining 1/2 cup flour to form a smooth, elastic dough, for 10 minutes. Form the dough into a ball, put it in a well-buttered large bowl, turning it to coat it with the butter, and let it rise, covered with plastic wrap, in a warm place for 1 hour, or until it is double in bulk. Punch down the dough and, working with one small piece of dough at a time, form it into 1/4-inch-thick ropes, each about 8 inches long. Arrange the ropes on buttered baking sheets, brush them lightly with the egg wash, and bake them in batches in the upper third of a preheated 450°F. oven for 15 minutes, or until they are golden. The breadsticks may be made 1 day in advance and kept in an airtight container. Reheat the breadsticks, wrapped in foil, before serving.
FENNEL AND COARSE SALT BREADSTICKS
Steps:
- In the large bowl of an electric mixer proof the yeast with 1/2 teaspoon of the sugar in 3/4 cup lukewarm water for 5 minutes, or until it is foamy. Add the remaining teaspoon sugar, 2 cups of the flour, the table salt, and the oil and beat the mixture with the dough hook until it is combined. Knead the dough, kneading in enough of the remaining 1 cup flour to make the dough form a ball, and knead the dough for 5 minutes, or until it is soft but not sticky. On a lightly floured surface let the dough rest, covered with a kitchen towel, for 15 minutes. Divide the dough into 12 pieces, working with 1 piece at a time and keeping the remaining pieces covered roll the dough between the palms of the hands to form 14-inch ropes, and arrange the ropes as they are formed 2 inches apart on baking sheets sprinkled lightly with the cornmeal. Let the breadsticks rise, covered loosely, in a warm place for 40 minutes, brush them lightly with the egg wash, and sprinkle them with the fennel seeds and the coarse salt. Bake the breadsticks in the middle of a preheated 45¿F. oven for 12 to 15 minutes, or until they are pale golden, and let them cool on a rack for 10 minutes. The breadsticks may be made 1 day in advance and kept in an airtight container.

- In a large bowl, dissolve yeast in warm water. Add sugar; let stand for 5 minutes. Stir in the oil, salt, whole wheat flour and enough all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Let rest for 10 minutes. Divide into 14 portions. Roll each portion into a 9-in. x 1-in. rope. Place 1 in. apart on greased baking sheets. Cover and let rise for 20 minutes or until doubled. , Whisk egg and water; brush over dough. Sprinkle with toppings if desired. Bake at 375° for 15-20 minutes. Serve warm.

- Put the flour, salt, sugar, yeast and oil in a mixing bowl. Pour over the water and stir to combine, first with a palette knife, then with your hands to bring it into a dough. Add the fennel seeds and sesame seeds and briefly work into the dough. Turn out onto a lightly floured work surface and knead for 10 minutes (or less time if using a stand mixer with a dough hook) until smooth and pliable.
- Sprinkle the work surface with a little polenta, roll out the dough thinly into a 25-30cm square, then cut the square in half.
