SOUTH PACIFIC SALMON

This tasty fish dish is nice served with rice and a cucumber mango salad (cucumber, mango, cilantro, lime juice, salt and pepper).

South Pacific Salmon image

Steps:

  • Heat grill or broiler.
  • Combine 1 Tbsp.
  • soy sauce and 1 tsp.
  • ginger in a plastic Ziploc bag; add salmon fillets.
  • Set aside to marinate about 10-15 minutes.
  • Combine remaining soy sauce and ginger with ketchup, sugar, lime juice and hot pepper in a bowl.
  • Stir briskly to dissolve sugar.
  • Remove salmon from marinade (discard the marinade).
  • Place salmon on grill or broiler and cook 5 minutes.
  • Turn it over and cook up to 5 minutes more, basting frequently with sauce.
  • When cooked through, remove from heat and drizzle with sauce.

Pacific Rim Salmon image

Steps:

  • In a small bowl, combine the pineapple juice, soy sauce, horseradish, parsley, 3 teaspoons sesame oil, honey and pepper. Pour 2/3 cup marinade into a large resealable plastic bag; add salmon and green onions. Seal bag and turn to coat; refrigerate for 1 to 1-1/2 hours, turning occasionally. Add remaining sesame oil to remaining marinade. Cover and refrigerate for basting., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, skin side down, covered, over medium heat or broil 4 in. from the heat for 8-12 minutes or until fish flakes easily with a fork, basting frequently with reserved marinade.

Pacific Rim Salmon image

Steps:

  • In a small bowl, combine soy sauce, vinegar, garlic, brown sugar, hoisin sauce, ginger, sesame seeds and lemon pepper.
  • Pour over the salmon in a shallow glass dish.
  • Cover and let marinate for 1 hour in the refrigerator.
  • Before preparing a hot fire, spray grill grate with non-stick cooking spray.
  • Grill the salmon, flesh side down first, directly on the grill grate, for about 5 minutes.
  • Using both a wide metal fish spatula and a grill spatula, carefully turn the fillet over onto the skin side and grill for another 5 minutes, until a milky juice appears on top of the thickest part of the fillet.
  • Serve immediately, sprinkled with the black sesame seeds.

1/2 cup soy sauce
1/2 cup rice vinegar
2 -3 cloves garlic, to your taste,minced
2 tablespoons firmly packed brown sugar

South Pacific Pork Roast (Crock Pot) image

Steps:

  • Season roast with salt and pepper and rub with minced garlic.
  • Pan sear (on top of stove) roast about 3 minutes on each side.
  • Place onion in bottom of crock-pot.
  • Place roast on top of onion.
  • Top roast with remaining ingredients, except Pineapple, cornstarch, and water.
  • Mix water and cornstarch and pour onto top of all ingredients.
  • Cover and cook on low for 8 hours.
  • Add the can of pineapple and cook for another hour, or you can do like me and be lazy and throw the pineapple in with the other ingredients and cook it the whole time!

1 large onion, sliced
4 tablespoons sugar
2 tablespoons Worcestershire sauce
2 tablespoons sherry wine (optional)
