- Preheat the oven to 375 degrees F and adjust racks to the middle position. Line 2 cookie sheets with parchment paper.
- In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, allspice, nutmeg, and salt.
- Using a hand held mixer cream together the butter, granulated sugar and the brown sugar until light and fluffy and the volume has increased. Add the egg and the vanilla and mix until incorporated. Stir in the sweet potato puree and blend until smooth. Beat in the dry ingredients in increments and combine well. Stir in the pecans.
- Drop by heaping tablespoons onto the prepared cookie sheets, leaving about 2 inches of space between each cookie. Bake until the cookies are lightly golden around the edges and they spring back from the touch, about 18 minutes. Let cool completely on the cookie sheets before glazing.
- For the glaze:
- Combine the confectioners' sugar, orange juice, and vanilla in a small bowl and stir until smooth. Drizzle over the cookies and let harden for 1 hour before serving.
- Cook's Note: If you need to thin the glaze, add more orange juice. If you need to thicken it, add more confectioners' sugar.

- Spread slices of sweet potatoes in a greased metal dish of 13 inches x 9 inches. Set aside.
- In a measuring cup, mix brown sugar, butter, orange zest and juice, ginger, salt, pepper. Cover and heat in microwave, at high power, for about 1 minute or until butter has melted and brown sugar is dissolved. Mix well and pour on the sweet potatoes.
- Cook in a preheated oven of 375 F for about 45 minutes or until sweet potatoes are tender (baste with orange glaze sometimes during cooking). Keep cooking under preheated grill for about 3 minutes or until sweet potatoes are golden and glazed. When ready to serve, sprinkle with green onions.

- Heat oven to 400°F.
- Peel and slice potatoes about 1 inch thick. Arrange in lightly greased 1 1/2 quart casserole dish.
- In small saucepan, stir together sugar, cornstarch, salt and orange peel.
- Slowly stir orange juice into the sugar mixture.
- Add butter. Cook stirring constantly until mixture boils and thickens. Boil and stir about 1 minute.
- Pour hot orange sauce over sweet potatoes. Cover and bake 1 hour, basting occasionally.
- Note: During Christmas I often bake the potatoes and prepare the sauce ahead of time. I then reheat the sauce, assemble and bake for about 30 minutes at 350F until heated through. Can be topped with marshmallows if desired.

The word "tsimmes" sometimes means a fuss or commotion, or even a muddle. This version is anything but fussy and definitely not muddled. Here, halved sweet potatoes are simply roasted and served with a scrumptious glaze that includes prunes, orange juice, fresh ginger and a hit of lemon.

- Position a rack on the lower third of the oven and heat oven to 400 degrees. Line a sheet pan with foil.
- Rub the sweet potatoes with the oil and season with salt and pepper. Arrange on the pan cut sides down and roast on the low rack until nicely browned on the cut sides and a paring knife inserted meets no resistance, 30 to 40 minutes. If they are getting too dark on the cut sides but are not yet done, turn them over.
- Meanwhile, combine the orange juice, half of the orange zest, lemon juice, honey, cinnamon, ginger, prunes and a big pinch of salt in a small saucepan. - Heat oven to 375 degrees (see Tip). Use a vegetable peeler to peel strips of zest off 2 oranges. Cut the strips into thin matchsticks using a sharp knife and transfer to a large bowl. Juice all the oranges, the lemon and limes into the bowl for 1 1/4 cups juice. Whisk in the brown sugar, salt, ginger, cinnamon, nutmeg and black pepper until the sugar dissolves.

- Pierce skin of sweet potatoes in several spots with a fork.
- Cook sweet potatoes in microwave oven until just tender, 12 to 15 minutes. Refrigerate sweet potatoes until cooled completely, at least 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Prepare a shallow 1 1/2-quart baking dish with cooking spray.
- Peel sweet potatoes and cut into cubes; spread into prepared baking dish.
- Mix sugar, cornstarch, salt, and ginger together in a glass measuring cup; pour orange juice into the cup while stirring with a whisk.
