SOY LIME MARINADE
An excellent marinade for any meat. I've tried this with fish, chicken, pork and beef, so like I said, ANY meat! Marinade should be good for up to 2 pounds of meat, this is an extremely flavorful marinade, a little bit goes a LONG way! Garnish your meat with lime wedges! Enjoy!

- Mix all ingredients and marinate with your choice of meat!
- Marinade for less than 2 hours for chicken or fish, and marinade no more than 4 hours for beef or pork. Use your judgment, DH and I like super strong flavors and will marinate for up to 8 hours.

SOY SAUCE MARINADE
I'm not really sure where I got this recipe. It's written in my handwriting on a 3x5 card that's stained with soy sauce. This makes a good marinade for beef or pork.

Steps:
- Mix all ingredients well.
- Pour over beef or pork and marinate 8 hours or overnight.
- Grill or broil meat.
- Leftover marinade should be discarded.
GINGER-SOY-LIME MARINATED SHRIMP
Steps:
- Place shallots, ginger, garlic, soy, lime juice, and sugar in a blender and blend until smooth. Add the green onion and oil and blend until combined. Season with black pepper, to taste. Place shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
- Preheat a grill to high. Remove shrimp from the marinade and grill for 1 1/2 to 2 minutes per side. Serve on brown paper bags, if desired.
SOY AND GARLIC MARINATED CHICKEN
This is the easiest marinade I have ever used, and one of the most popular with my family. This recipe also works well with any cut of chicken--thighs, legs, etc.

- In a large, nonporous bowl, combine the garlic and the soy sauce. Add the chicken and turn to coat well. Cover and marinate in the refrigerator for at least an hour.
- Preheat an outdoor grill for medium high heat and lightly oil the grate.
- Grill chicken over medium high heat for 10 to 15 minutes per side, or until internal temperature reaches 180 degrees F (80 degrees C). Discard any remaining marinade.

SOY MARINADE

- In a small bowl, combine all the ingredients and mix well. Transfer to a tightly sealed jar and store in the refrigerator for up to 3 weeks.
SOY-LIME MARINADE FOR STEAK
I made this to marinate a couple of pieces of fillet mignon. I let them marinate for 8 hours and they were wonderful on the grill. I had some of the marinade leftover and tossed a few shrimp into it for about 30 minutes and grilled them up as well. They were quite tasty as well! This makes enough marinade for 4 (5 oz) fillets or 2 fillets and 1/2 lb of shrimp.

EDAMAME (COOKED FRESH SOYBEANS)

- Separate the pods from the stalks. Place bean pods in a large bowl. Sprinkle generously with salt, rub vigorously, and let stand 15 minutes. Bring a large pot of well-salted water to a boil, add the beans and boil over high heat for 5 to 6 minutes. (For a firmer bean, decrease the cooking time.) Don't cover the pot or the beans will lose their bright green color. When ready, drain beans and serve hot or at room temperature. To eat as finger food, serve the beans in baskets or bowls. Squeeze the pods with your fingers to press the beans into your mouth and discard the pods.
FLANK STEAK WITH LIME MARINADE
It's very lean, so flank steak requires tenderizing; marinate in this Asian-infused sauce before cooking, and thinly slice against the grain before serving.

- In a resealable plastic bag, combine lime juice, soy sauce, scallions, ginger, and red-pepper flakes. Add steak, and seal bag (place in a dish to catch any leaks); marinate in the refrigerator, turning occasionally, up to 1 hour.
- Heat grill to high; lightly oil grates. Remove steak from marinade, letting excess drip off (discard marinade); season with salt and black pepper. Place on grill; cover. LIME-MARINATED GRILLED SALMON
The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

- Whisk together lime juice, soy sauce, and oil in a bowl. Place chicken breasts on a work surface between two layers of waxed paper or plastic wrap. Using the smooth side of a meat pounder, pound the chicken breasts until all the pieces are an even 1/2-inch thickness.

- Add soy sauce, lime juice, olive oil, honey, and garlic to a small bowl in that order (the olive oil will help the honey slide right out of the spoon). Whisk together thoroughly.
- Place chicken in a large Ziploc bag and pour the marinade inches Marinate in the refrigerator for at least 30 minutes. Preferred time is 1-4 hours.
- After marinating, grill chicken over high heat for about five minutes per side for slices or seven minutes per side for whole breasts, until cooked through.
- Additional marinade can be made and then reduced down to serve over rice as a complimentary side to the grilled chicken.
