SPARKLING BERRY JELLO SALAD

I make this Jello often in the spring/summer. It looks really nice in a mold and sets up great. The fresh berries in the center of the mold makes a beautiful presentation.

Sparkling Berry Jello Salad image

Steps:

  • Stir boiling cranberry juice (heat in pan) into gelatin in large bowl at least 2 minutes (until well dissolved).
  • Stir in club soda, liqueur, and lemon juice.
  • Refrigerate about 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites-I set my bowl inside a larger bowl of ice water and it takes about 20 minutes).
  • Stir in 2 cups of the berries.
  • Spoon into 5-cup mold.
  • Refrigerate about 4 hours or until firm.
  • Unmold and top with remaining 1 cup of berries in center.

2 cups cranberry juice cocktail (or cran-raspberry is good)
1 (6 ounce) package red Jell-O (black cherry or raspberry is what I love)
1 1/2 cups club soda
1/4 cup creme de cassis (I've never used but someday....) (optional)
1 teaspoon fresh lemon juice
3 cups raspberries or 3 cups sliced strawberries

Steps:

  • This recipe can either be made in small individual molds or in one larger mold. Prepare molds by filling with mixture of chilled grapes and berries. Place water in small pan and sprinkle gelatin over the top. Let sit for 1 minute. Place over low heat on the stove and stir until smooth. Add sugar and continue to cook for about 1 minute until sugar is dissolved. Remove from heat and let cool to room temperature. Pour sparkling grape juice into a bowl. Add cooled gelatin mixture and stir. Pour gelatin mixture into prepared molds. Place in refrigerator and let chill until firm, at least two hours or overnight. To loosen gelatin molds: quickly dip outside of mold in pan filled with warm water to loosen. Invert and serve.

Steps:

  • Spray 4 (1/2-cup) custard cups or ramekins with cooking spray. Place cups on cookie sheet. In small bowl, gently toss the berries. Divide mixture evenly among cups.
  • In medium bowl, stir together gelatin and 3 tablespoons sugar with whisk. Add boiling water; stir with whisk until gelatin is completely dissolved. Add ginger ale; stir until well blended. Pour gelatin over berries in each cup (cups will be full). Refrigerate 2 hours or until set.
  • In chilled medium bowl, beat whipping cream, 1 tablespoon sugar and the vanilla with electric mixer on low speed until mixture begins to thicken. Gradually increase speed to high and beat just until soft peaks form.
  • To serve, unmold each gelatin cup onto dessert plate; top each with 1/4 cup whipped cream. Garnish with mint.

Steps:

  • Sprinkle gelatin over 1/2 cup wine, and let stand 5 minutes.
  • Combine 1 cup wine, juice, and sugar in a medium saucepan; bring to a boil over medium-high heat.
  • Remove from heat; add gelatin mixture, stirring until the gelatin dissolves.
  • Place pan in a large ice-filled bowl; let stand 20 minutes or until thick but not set, stirring occasionally.
  • Whisk the gelatin mixture to form small bubbles; fold in orange sections, grapes, and raspberries.
  • Spoon gelatin mixture into a 5-cup mold coated with cooking spray.
  • Cover and chill at least 4 hours.
  • Place a plate upside down on top of mold; invert mold onto plate.

Steps:

  • Mix together the box of jello and boiling water in a large bowl. Stir until all jello is dissolved. Mix in can of pineapple and can of pie filling until combined. Pour jello mixture into a 9x13 pan and refrigerate until set (about 4-5 hours).
  • Mix together cream cheese, sour cream, sugar, and vanilla and beat until smooth. Place a spoonful of cream on each serving. Garnish with fresh berries.

  • Stir boiling juice into gelatin in large bowl 2 minutes until completely dissolved. Stir in cold club soda, liqueur and lemon juice. Refrigerate about 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
  • Toss berries gently. Stir in 2 cups of the berries. Spoon into 6-cup mold or bowl sprayed with cooking spray; cover. Refrigerate 4 hours or until firm.
  • Unmold. Garnish with remaining 1 cup berries.
