Steps:

  • In a medium saucepan bring water to boiling.
  • Add tea bags, anise, and cinnamon stick.
  • Reduce heat. simmer, uncovered, for 3 to 5 minutes. Discard tea bags and cinnamon stick. Stir in nectar, honey, and lemon juice. Heat through.
  • 2. Pour tea mixture into four heat-proof cups, floating a star anise on top of each. Makes 4 servings.

  • In a spice grinder or with a mortar and pestle, combine cardamom pods and peppercorns; grind until aromas are released., In a large saucepan, bring water to boil. Add cardamom mixture, honey, cinnamon sticks, cloves, star anise and ginger; simmer 5 minutes or according to taste. Remove from heat. Add tea bags; cover and steep 5 minutes., Meanwhile, in a small saucepan, heat milk. Strain tea, discarding spices and tea bags. Stir in hot milk and vanilla. Pour into mugs. If desired, sprinkle with nutmeg.

Spiced Milk Tea (Masala Chai) image

Steps:

  • Grind together cardamom, cinnamon stick, peppercorns, and fennel seeds with mortar and pestle or coffee/spice grinder.
  • Bring milk just to a simmer in a 2-quart heavy saucepan. Stir or whisk in brown sugar, ground spice mixture, ginger, and 1/8 teaspoon salt, or to taste. Reduce heat to low and simmer gently, stirring occasionally, 3 minutes to infuse flavors.
  • Meanwhile, bring water to a boil in a 1-quart saucepan, add tea, and boil 1 minute.
  • Pour tea through a fine-mesh sieve into hot milk mixture (discard tea leaves) and cook over low heat 1 minute. Stir before serving.

10 green cardamom pods, cracked, seeds removed, and pods discarded, or 1/2 teaspoon cardamom seeds or ground cardamom
1 (1 1/2-inch) piece cinnamon stick
4 peppercorns (preferably white)

SPICED ANISE TEA

This is one of the many recipes I came up with on my own while experimenting with my various tea herbs. As you can probably guess, due to the anise and the fennel, the flavor will remind you a lot of licorice. If you like that flavor then you'll surely enjoy this blend. Anyway, it's good hot or chilled. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

Steps:

  • Cut the vanilla bean into small pieces first.
  • Assemble all the ingredients and place in a tea ball. Note: If you don't own a tea ball, then you can put the ingredients directly in the water and then strain out later.
  • Place tea ball in hot water and steep for 10 minutes.

Steps:

  • Place water, sugar, star anise, cinnamon stick, and cardamom in a saucepan; bring to a boil. Remove from heat and add tea bags. Let tea steep and cool to room temperature, about 1 hour.
  • Remove tea bags and strain out whole spices; discard. Whisk in condensed milk. Pour into a large pitcher and refrigerate until flavors combine, at least 1 hour.
  • Fill 4 glasses with ice. Serve tea over ice.
