  • In small bowl, mix sugar, chili powder and red pepper.
  • In large microwavable bowl, microwave butter uncovered on High about 30 seconds or until melted. Stir in cereal and nuts until evenly coated. Stir in sugar mixture until evenly coated.
  • Microwave uncovered on High 3 to 4 minutes, stirring after 2 minutes, until mixture just begins to brown. Spread on waxed paper; cool about 15 minutes. Store in airtight container.

  • In large bowl, mix cereals and almonds. Line cookie sheet with waxed paper or foil.
  • In 2-cup measure, beat egg white with fork. Mix sugar, salt and spices together in small bowl. Pour egg white over cereal; sprinkle with sugar-spice mixture.
  • Microwave on High 3 to 4 minutes, stirring after every minute until cereal and nuts are browned and sound crisp when stirred with spoon. Pour onto waxed paper to cool. Store tightly covered.

Bold and Low-Carb (Chex Mix) Snax image

Steps:

  • Pre-heat oven to 250 degrees. Put butter in roasting pan in oven to melt.
  • Mix in Worcestershire sauce and seasonings. Mix nuts into butter thoroughly and bake for 15 minutes. (If any of your nuts are pre-salted, reduce the seasoning salt. You may also wish to reduce seasoning salt if you don't like salty foods. If any of your nuts are pre-roasted, reserve until last 15 minutes of baking.)
  • Add cereals to nuts and stir well to distribute butter and spices. This first mixing is important to distribute flavors.
  • Bake for 1 hour more, stirring 3 times.
  • Allow to cool before storing in airtight container.

Steps:

  • Mix all cereal ingredients together in a large roaster or roasting pan. A Nesco electric roaster works best.
  • Mix spices together and toss with cereal ingredients.
  • Pour melted butter over cereal and spices. Mix to coat thoroughly.
  • Bake at 250 degrees, turning every 15 minutes until cereal is crisp and golden brown. Baking time is usually 1 to 1 1/2 hours.
  • This recipe makes a large batch of mix. The cereal and spice amounts may be adjusted according to taste.
