DIRTY RICE
This classic Cajun dish pays homage to the Louisiana holy trinity (onions, bell peppers and celery). The finely chopped proteins give the rice its signature "dirty" look. Traditionally, dirty rice includes chicken liver -- you can omit it, but don't fear the liver! It adds another layer of texture and depth of flavor.

Steps:
- Heat the olive oil in a Dutch oven or large heavy-bottomed pot over medium-high heat. Add the sausage, ground beef and chicken livers and cook, breaking the meat into small bits with a wooden spoon, until no longer pink, 3 to 4 minutes. Transfer to a medium heatproof bowl with a slotted spoon.
- Remove and discard all but 2 tablespoons of the fat from the Dutch oven. Add the onion, bell pepper and celery and cook down, stirring occasionally, until the vegetables have softened, 4 to 5 minutes. Add the garlic, thyme and bay leaves and cook, stirring frequently, until fragrant, about 1 minute. Stir in the rice, oregano, smoked paprika, cayenne, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper and cook about 30 seconds. Stir the cooked meat back in, then add the beef broth and Worcestershire sauce. Bring to a boil, reduce the heat to a low simmer and cover. Cook until the rice is tender and has absorbed the liquid, about 18 minutes.
- Remove from the heat. Remove and discard the bay leaves, stir in the scallions and season.
SPICY DIRTY RICE, IRIS'S
This is my dish when I want Popeyes Dirty Rice and Fried Chicken with biscuits homegrown if you will. I got as close to making it like My mama's that I could hope you like it as much as we do.

Steps:
- 1. Heat oil in large nonstick frying pan over medium heat. add aromatics, stir to blend. Keep stirring until veggies are soft and garlic is golden. Add ground beef or turkey and Italian sausage, breaking up with a spoon continue to cook about 10 minutes or until meat is nicely browned. add peppers and adjust seasonings.
- 2. Stir in rice a nd add broth and bring to a boil. Lower hear, cover and simmer 25-30 minutes or until most of the liquid is absorbed and rice is tender. Remover from heat, taste adjust seasonings, stir in green onions and serve hot.
SPICY RICE
Steps:
- In a sauce pan combine oil, onion and green pepper. Saute over medium heat until vegetables are tender. Sprinkle in cayenne pepper. Add heated chicken stock and tomatoes. Bring to a boil. Add rice and stir. Cover and reduce to a simmer. Continue simmering over low heat until all liquid is absorbed. Serve hot.
DIRTY RICE WITH MUSHROOMS
This vegetarian version of Southern dirty rice replaces the traditional ground beef and chicken livers with hearty mushrooms, creamy black-eyed peas and flavorful spices for a satisfying one-pot meal. The recipe starts with the classic Cajun holy trinity - onion, green bell pepper and celery in equal parts - to create a flavorful foundation. Steps:
- In a large Dutch oven, heat 2 tablespoons of the oil over medium. Add onion, celery and bell pepper, and season with salt and pepper. Cook, stirring occasionally, until softened, 5 minutes. Add mushrooms, season with salt and pepper, and cook, stirring occasionally, until mushrooms are tender and their liquid is absorbed, 5 minutes. Stir in garlic until fragrant, 1 minute.
- Add rice, Cajun seasoning, 1 teaspoon salt, ½ teaspoon pepper and the remaining 2 tablespoons oil. Stir until well blended, then add broth, scraping bottom of pot to remove any browned bits. Bring to a boil over high heat.
- Cover and reduce heat to low. Cook until rice is tender and liquid is absorbed, about 15 minutes. Scatter black-eyed peas on top in an even layer, cover and cook 3 minutes longer. Turn off heat.
- Add scallions to the pot, and fluff rice with a fork. Divide among bowls and garnish with more scallions. Serve with hot sauce.
DIRTY RICE

- In a large skillet, cook sausage for 2-3 minutes; stir in chicken livers. Cook until sausage and chicken livers are no longer pink, 5-7 minutes; drain and set aside. , In the same skillet, melt butter over medium heat. Add onion, celery and green onions. Cook and stir until vegetables are tender, 3-5 minutes. Add parsley and garlic; cook 1 minute longer. Add broth, basil, thyme, salt, pepper and hot pepper sauce. This is a family favorite. This can be made without the seasonings and still taste good. If you can handle it, you can add cayenne pepper for that extra kick. If you find this is too spicy, I would recommend topping it with Parmesan cheese. Warning, this is spicy!

Steps:
- 1) Finely chop green pepper, onion, and celery and set aside. You want the pieces to be similar in size to cook evenly.
- 2) Begin cooking rice (per directions on box or bag).
- 3) Preheat a large skillet or large pot with olive oil over medium heat.
- 3) Slice andouille sausage into 0.5 -1 inch pieces.
- 4) Place sausage into pot and cook for 4-5 minutes season with a pinch of salt and black pepper.
- 5) Add garlic and other vegetables and cook for 2-3 minutes.
- 6) Place chicken stock into pot and bring to a boil. Stir in cayenne pepper. Reduce heat by half and let simmer for 10-15 minutes until vegetables are tender and stock has reduced by half.
- 7) Combine cooked rice into skillet or pot and add hot sauce. Let simmer for 2-3 minutes to combine all flavors.
- 8) You can serve this with salad or bread. Enjoy!

- Het oil in large nonstick skillet over medium heat. Add the garlic, onion, celery, and bell pepper, stirring to blend.
- Cook, stirring frequently , for about 3 minutes or uniil the veggies have wilted and the garlic is golden. Add the turkey (both), cook for about 7 minutes or until nicely browned. Add the jalapenos and season to taste with salt and pepper.
- Stir in rice. Add the broth and blackened spice and bring to a boil.
- Lower the heat, cover, and simmer for about 25 minutes or until the rice is tender.
- Remove fro heat. Stir in the scallions. Taste and, if necessary, add salt and pepper and serve.
