SPICY FISH ON SAVOURY RICE

Steps:
- Combine the cake flour, cayenne pepper and dried basil and transfer the mixture to a fairly large flat plate.
- Season the hake fillets to taste with salt and roll each fillet in the cake flour mixture.
- Dip each fillet in the whisked egg and roll in the breadcrumbs.
- Place on a baking sheet and chill for about 15 minutes.
- Fry in heated oil until brown on the outside and cooked inside.
- Sauté the onion and green pepper in a little heated oil until soft.
- Add the rice and stir-fry for about 1 minute.
- Pour over the chicken stock and simmer until the rice is tender and done, adding boiling water if necessary.
- Sauté the mushrooms in a separate pan until done and mix with the cooked rice.
- Add the pecan nuts.
- Spoon the rice onto a serving platter or onto individual plates and place the fish on top.
- Serve with tartar sauce or slices of lemon.

SPICED RICE WITH PRAWNS

Steps:
- Tip the rice into a pan of boiling, salted water and simmer for 10 minutes, adding the peas for the last 3 minutes. Drain well.
- While the rice is cooking, heat the 2 tablespoons of oil in a large frying pan or wok. Add the onion and bacon and stir fry for 3-4 minutes, until the onion starts to turn golden and the bacon begins to cook. Stir in the curry paste and cook for a few seconds, then tip in the prawns and heat them through for a minute or so.
- Push the prawn mixture to one side of the pan and add the drop of oil to the other side. Pour the egg into the oil, stir until cooked like scrambled eggs, then mix into the prawns. Add the rice and peas and mix well. Serve immediately, with soy sauce for sprinkling, if you like.

- Prepare the vegetables:
- 1. Peel and chop the onion
- 2. Slice the mushrooms
- 3. Deseed and dice the red pepper
- 4. Chop the tomato
- Fry the onion in oil until soft.
- Add the mushrooms and red pepper and cook for a further 2 minutes.
- Stir in the rice.
- Mix the stock powder with the water.
- Add the stock, peas and curry powder to the rice mixture.
- Simmer for 15 minutes, until the rice is tender.
- Serve the rice in a bowl and sprinkle the chopped tomato on top.
NICE 'N' SPICY SAVOURY RICE

- Heat oven to 180C/fan 160C/gas 4. Rinse and soak the rice for 10 mins. Heat a large, ovenproof saucepan. Add the oil, then the onion, garlic and ginger. Cook on a low heat until the onion is soft. Add the cloves, cinnamon and cardamom pods and cook for a further 2 mins on a low heat. Add the curry powder and cook for a further 2 mins, then stir.
- Drain the rice and add it to the saucepan. Stir so that the rice is coated in the oil and spices. Add the peas, sweetcorn and half the flaked almonds, if using. Pour over the stock and stir.
- Cover the pan with a lid or with a sheet of foil, then cook in the oven for 15-20 mins. Remove from the oven, scatter with the remaining almonds, if using, and serve.

- Start with the rice - Heat the oil in a medium-sized saucepan and add the onion. Cook for 3-4 minutes in a medium heat until the onions starts to soften. Add in the garlic, paprika, turmeric, coriander and cardamom pods. Give it a stir and allow to cook for a minute.
- Add in the rice and a crumbled stock cube. Stir until the stock cube is incorporated and then pour boiling water from the kettle over until the rice is covered by about 1cm of water. Stir once more and then leave to simmer gently for 15-18 minutes until the rice is tender. You may need to add a little more water if the pan starts to boil dry (but you shouldn't need to drain off any water at the end).
- Whilst the rice is cooking, start on the salmon. Mix 1 and 1/2 tbsp of the oil with the sugar, garlic powder, paprika, salt and pepper. Press onto the flesh side of the salmon fillets.
- Heat the remaining ½ tbsp. oil in a frying pan and place the salmon in the pan, skin-side-down. Cook for 3-4 minutes on a medium heat, then place under a grill (broiler) and continue to cook for another 4-5 minutes until the spicy coating is dark and caramelized and the salmon is cooked through. Remove from the grill.
