SPICED WATERMELON RIND

When everyone else tosses their rind, our family pickles it! Oh what a treat this is during the holidays and it's always gone after the first of the new year. To me, it has a taste of Christmas about it. This does not taste like watermelon at all but more like a sweet relish! If you have never tried it, now is the time!

Spiced Watermelon Rind image

Steps:

  • Place watermelon chunks in large dishpan or crock.
  • Combine salt with 2 quarts of water and pour over the watermelon. Let it set overnight.
  • Drain and rinse with fresh water and then drain again.
  • Place watermelon in a large saucepan, add fresh water and cook until tender. Drain.
  • Meanwhile, combine sugar, vinegar, 1 1/2c water and spices. Bring to a boil and pour over the cooked and drained watermelon. Let it set overnight.
  • Drain watermelon, reserving the syrup. Bring the reserved syrup to a boil and pour over the watermelon. Let it set again overnight. Repeat this process for 3 days.
  • On day 3, cook the watermelon and syrup together for 3 minutes. Then pour into hot sterilized jars and seal using cold bath method.

SPICY WATERMELON RIND SPREAD

One of summer's gift to the world is watermelon. We all know it as a thirst quencher loaded with antioxidants, but most of us dispose the rind (the white part between the the green outer husk and the red inner fruit) without knowing it has nutritional value too. We can use it in our cooking as salads, chutney/ dip/ spread and in moru kuzambu/ spiced buttermilk. Slice only the white part from the green rind.

Spicy Watermelon Rind Spread image

Steps:

  • Slice only the white part (the white part between the the green outer husk and the red inner fruit) from the green rind.
  • Dry the (can) garbanzo beans in a towel. Heat oil in a pan and add garbanzo beans, chili flakes and garlic, stir fry it for 2 minutes.
  • Now add the chopped watermelon rind and fry for few mins.
  • Add the cilantro leaves and stir it till it becomes wilted (this step is optional)
  • Add the chopped tomato and cook, till the tomatoes are well blended.
  • Pour the lemon juice and cook till it becomes dry. Add salt
  • Grind the mixture in a blender.
  • Transfer it to a bowl, We can add cream cheese with it and use it as a sandwich or tortilla spread or as a dip.

WATERMELON RIND PRESERVES

This is an old-fashioned recipe and a wonderful way to reduce food waste. Watermelon rind preserves are not like traditional preserves that you buy in a grocery store. They are more like candied watermelon pieces in a cinnamon-spiced syrup. The watermelon pieces can be eaten plain or stirred into cakes and cookies, as you would use candied cherries, pineapple or citrus peel. Watermelon Rind Preserves image

Steps:

  • Trim green skin and pink flesh from watermelon rind; chop enough rind to yield 6 cups. In a large bowl, stir salt and 2 quarts warm water until salt is dissolved. Add 6 cups chopped rind. Cover and refrigerate 5-6 hours. Drain and rinse in cold water; drain. Cover rind with cold water and let stand 30 minutes. Drain. Transfer rind to a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer until just tender, 10-15 minutes; drain., To make preserves, in a stockpot, combine sugar, lemon juice and 7 cups water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in rind. Place cinnamon, cloves and cardamom on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Add to stockpot. Return to a boil. Reduce heat; simmer, uncovered, until rind is clear, 30-45 minutes. Discard spice bag., Remove from heat. Ladle hot mixture into 6 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with water simmering, ensuring that they are completely covered with water. Bring to a boil; process 5 minutes. Remove jars and cool.

WATERMELON BBQ SAUCE AND PICKLED WATERMELON RINDS

Watermelon has so much more to offer than just a refreshing summertime snack. And the entire watermelon can be used -- no need to throw away the rind. The juice adds the perfect amount of sweetness to a tangy BBQ sauce and the rind can be quickly pickled while the sauce cooks. Serve with chicken, ribs, vegetables or even stir the sauce into homemade baked beans for your next cookout and guests will be begging for the recipe.

Watermelon BBQ Sauce and Pickled Watermelon Rinds image

Steps:

  • Use a Y-shaped peeler to remove the outer green part of the watermelon. Scoop out the pink flesh and place in a blender (you should have about 1 pound 2 ounces); set the rind aside.
  • Blend the watermelon flesh in a blender until it becomes juice. Pour through a fine-mesh sieve into a medium saucepan. (The amount of juice you have will vary depending on the watermelon.) You will need 2 cups of juice in the saucepan; transfer any excess to an airtight container and refrigerate for up to 1 week and save for another use.
  • Add the ketchup, Dijon, Worcestershire, molasses, coriander, garlic powder, onion powder, 1/4 cup of the light brown sugar, 1/4 cup of the vinegar, juice of 1 lime and a generous amount of freshly ground black pepper to the saucepan and whisk until smooth. Bring to a boil over medium-high heat, stirring occasionally, then reduce the heat to medium-low and simmer, stirring occasionally, until the sauce has thickened and reduced by a quarter, about 20 minutes.
  • Meanwhile, combine the salt, lime zest, juice of the remaining lime, and the remaining 1/4 cup each light brown sugar and vinegar in a small saucepan and bring to a boil over medium-high heat. Cook, stirring once or twice, until the sugar has dissolved, about 5 minutes. Remove from the heat.
  • Cut the rind into 2-by-1/4-inch sticks; transfer to the small saucepan with the brine and stir to combine. Add the ice cubes (and stir until the ice has melted. Let sit for 5 minutes to quickly pickle. Drain the pickled rinds and transfer to a serving bowl.

Watermelon Rind Preserves image

Steps:

  • 1. Peel off the green part of the watermelon rind, and slice into 2 inch pieces. Soak the rind in a solution of 1 gallon water and 1/2 cup salt overnight. Remove rind from the salt water, and place in a stockpot with clean water to cover. Bring to a boil over medium-high heat, and cook for about 30 minutes, or until the rind is tender. Drain. In a large pot, combine the sugar, 8 cups water, and sliced lemons. Tie the cinnamon and cloves into a cheesecloth bag, and place in the pot. Bring the syrup to a boil, and boil for 5 minutes. Add the rinds, and cook until transparent. Remove spice bag. Stir in red food coloring, if using. Ladle preserves into hot sterile jars, and process to seal.

4 lb white part of rind, cut into 2 inch pieces
1 gal water

PICKLED WATERMELON AND WATERMELON RIND

This is a great way to have some fruit mixed in with your pickled vegetables. The pickling liquid is also delicious. I use the liquid in marinades for meat, salad dressings or sauce, and even cocktails! I do pickled rind and pickled watermelon at the same time to maximize the use of the fruit. I start with a huge wedge of melon (because you will nibble, and so will everyone else as they see you making this) and cut the cubes. Cut the rind (not the skin) into small pieces once you have removed the flesh.

Pickled Watermelon and Watermelon Rind image

Steps:

  • In a small saucepan, combine the vinegar, sugar, salt and 4 cups water over medium heat. Bring up to a boil. Place the coriander and peppercorns on a cutting board. Lightly crush the spices with the bottom of a sturdy pan, then add them to the liquid. Turn the heat down to low, and simmer for 5 minutes. Taste for seasoning. It should be a mix of vinegary, sweet and slightly salty. Shut it off to cool slightly.
  • Fill a quart-size jar with the watermelon cubes and a pint-size jar with the rind pieces.
  • Pour the vinegar mixture over the melon and rind and let it cool at room temperature, uncovered, for 2 hours. Place in the refrigerator and let it chill, uncovered, overnight. Then cover tightly. The pickles will be good for 2 to 3 weeks in the refrigerator.

Steps:

  • Remove watermelon flesh from rind and reserve flesh for another use. Scrape off and discard any remaining pink flesh from rind, then cut rind crosswise into 2-inch-wide strips and remove green peel with a Y-shaped vegetable peeler or a sharp knife. Discard green peel. Cut white rind into 1/2-inch cubes (you will have 5 to 6 cups).
  • Bring rind and remaining ingredients to a boil in a 4-quart heavy saucepan over moderate heat, stirring until sugar is dissolved. Reduce heat and simmer, uncovered, stirring occasionally, until rind is tender and translucent and liquid is syrupy, 45 to 55 minutes. Cool chutney, uncovered, then chill in an airtight container 1 to 3 days to allow flavors to mellow.
