TOFU SCRAMBLE RECIPE BY TASTY
Here's what you need: tofu, bell pepper, onion, oil, salt, black pepper, onion powder, garlic powder, turmeric, lemon juice

Steps:
- Drain tofu from container, wrap it in a paper towel, and place it on a plate. Rest another plate on top of the tofu and microwave for 3-5 minutes.
- Unwrap the tofu and cut into cubes.
- Place the tofu in a bowl and mash with a fork.
- Cut the top off a bell pepper and remove all the seeds and thinly slice.
- Chop the onion.
- Heat oil in a pan over medium heat. Add the onions and peppers, and cook until softened.
- Add in the tofu and cook on medium heat until most of the water has evaporated.
- Add the salt, pepper, onion powder, garlic powder, and cumin, and mix well, until all the seasonings are evenly distributed.
- Add the lemon juice to the tofu and mix until evenly combined.
- Remove the tofu from the heat and serve.
- Enjoy!

Steps:
- Heat oil in wok over high heat. Add bell peppers, ginger, and garlic; sauté until peppers just begin to soften, about 2 minutes. Add tofu and green onions; toss 2 minutes. Add next 3 ingredients. Toss to blend, about 1 minute. Add spinach in 3 additions, tossing until beginning to wilt, about 1 minute for each addition. Mix in basil. Season with salt and pepper. Sprinkle peanuts over.

Steps:
- Drain the tofu.
- Blend the mushrooms, chestnuts, garlic, and tofu in a food processor until roughly blended, there should still be a few chunks.
- Place the blended ingredients in a bowl and add the soy sauce, chili sauce, salt, and mustard, and mix.
- Wet the corners of the wonton wrappers with a little bit of water as you need them.
- Spoon a little more than a teaspoon of tofu filling into the middle of the wrapper.
- Fold the corners of the wrappers and seal with a fork.
- Place them on a greased pan and place in the oven for 10 minutes at 375°F (You can also steam them, for a softer texture, or even deep fry them for a quick cook.).
- Enjoy them with sweet Thai chili sauce or with more Chinese mustard.

- Wrap tofu in a clean kitchen towel and place on a rimmed baking sheet. Weigh down with a heavy object (a couple of heavy cans works well) and let sit 10 minutes. Unwrap tofu and slice in half lengthwise, then cut crosswise into 6 sections to create 12 squares.
- Whisk soy sauce, mirin, sesame oil, gochugaru, and 3 Tbsp. water in a small bowl to combine; set sauce aside.
- Trim dark green top from scallion and thinly slice; set aside. Thinly slice remaining white and pale green parts of scallion. Heat 1 Tbsp. grapeseed oil in a nonstick skillet over medium-high. Carefully add tofu in a single layer and lightly season with salt. Cook, undisturbed, until golden brown, about 5 minutes; turn over and cook until golden brown on other side, about 5 minutes. Transfer tofu to a plate; reserve skillet (no need to wipe out).
- Heat remaining 1 Tbsp. grapeseed oil in reserved skillet over medium. Cook scallion white and pale green parts, garlic, and ginger, stirring, until softened but not browned, about 1 minute.
- Return tofu to skillet. Pour in reserved sauce and bring to a simmer. Reduce heat to medium-low and cook, turning tofu once or twice and occasionally spooning sauce over, until sauce is reduced by about half, about 4 minutes.
- Transfer tofu to a large plate, spoon sauce over, and sprinkle with sesame seeds and reserved scallion top. Serve with rice alongside.

- Mix pork, green onions, garlic, wok oil, soy sauce, salt together. (adjust amounts to personal taste).
- Wet edges of each wonton wrapper and place a spoonful of the pork mixture in the center. (work one at a time).
- Heat the oil for cooking to at least 350 degrees. (To see if the oil is ready, drop a wonton in and if it starts to bubble you are set to go!).
- Fry to golden brown.

- 1. Fill a saucepan with water and bring to a boil. Add the leafy greens and blanch until tender. Drain immediately, flush with cold water, and drain well. Finely chop and then put in a dishtowel and squeeze to remove excess moisture. You should have 1/4 firmly packed cup.
- 2. Put the tofu in the dishtowel and squeeze to remove excess moisture. Transfer to a bowl, mash to a fine texture, then add the chopped greens, ginger and scallion, combining well.
- 3. In another bowl, combine the salt, white pepper, sugar, 1 1/4 teaspoons soy sauce, rice wine, and sesame oil, stirring well. Pour over the vegetable and tofu mixture, and then vigorously stir to create a compact mixture. Cover the filling with plastic wrap and set aside for 30 minutes, or refrigerate overnight, returning it to room temperature before moving forward. Makes about 1/2 cup.
- 4. Fill each wonton skin with about 1 teaspoon of the filling, creating triangles or nurse’s caps (form a sealed rectangle, then bring the two folded corners together, cross then seal). Remember to moisten the edges with water before folding and seal well. As you work, put the finished wontons on a parchment paper-lined baking sheet that’s been lightly dusted with cornstarch. When done, loosely cover with plastic wrap or a dry dishtowel to prevent drying.
