BROCCOLI-SPINACH CASSEROLE
Here is another recipe pried out of my Aunt Antoinette. It is extremely simple and is great to bring to a potluck or holiday gathering.

Steps:
- Mix all ingredients together in a large bowl. Place in a buttered casserole dish. Bake at 350 degrees for 40 minutes.

Steps:
- Preheat oven to 375°F.
- Season chicken to taste with salt and pepper. Cook chicken in 2 T. olive oil over medium high heat until almost done. Remove from pan. Thaw spinach and drain and press out excess water.
- Using same pan add last of olive oil, onions and garlic. Cook until onions are translucent. Add flour and cook for 1-2 minute.
- Add the chicken broth, cream and milk to onions. Whisk well for 30 seconds. Bring to boil stirring frequently. Reduce heat to medium/low and simmer sauce until slightly thickened.
- Add broccoli, spinach, 1 cup cheese and sauce in large bowl. Stir until well mixed and pour into 9x13-inch glass baking dish.
- Cover with foil and bake until edges are bubbly and middle is hot. Remove foil and sprinkle remaining cheese on top. Return to oven until cheese is melted.
BROCCOLI AND SPINACH CASSEROLE
This recipe was given to me by co-worker while I was in lab tech training 35 years ago. Great sidedish that tastes great.

Steps:
- 1. Thaw out spinach and broccoli. Squeeze out excess liquid.
- 2. Add sour cream and French onion soup mix. Stir to mix.
- 3. Place in casserole dish.
- 4. Bake at 350 degrees for 30 minutes. Remove from oven and place grated cheese on top of casserole. Return to oven until cheese melts.
LOW FAT SPINACH & BROCCOLI CASSEROLE
Modification of a recipe found on the back of a package of spinach. It is very good if you like vegetable casseroles, but without the fat!

- Microwave spinach & broccoli as per package directions; drain well.
- Meanwhile, saute mushrooms in light margarine & crushed garlic.
- In a large mixing bowl, combine soup, mayo, egg whites and seasonings.
- Add cooked vegies, including mushrooms.
- Mix well.
- Pour mixture into an 8x8 pan which has been sprayed with nonstick cooking spray.
- Bake at 350 for about 35-40 minutes, or until firm.

A good friend of mine gave me this recipe and it is AMAZING! Perfect as a side dish or main dish. Refridgerate the leftovers (if there are any!) and have a great breakfast!

- Preheat oven to 350.
- Spray 9x13 glass dish with no-stick cooking spray.
- Cook the frozen vegetables according to packaged instructions, and drain well.
- Mix the cheeses with the soup.
- Beat eggs well and add to cheese and soup mixture.
- Combine all ingredients, stirring slowly into liquid mixture.
- Pour into glass dish and cook for approximately 35 minutes.

- Prepare all the vegetables (except frozen veggies) as indicated in parenthesis - peel, slice or chop everything, except for the frozen veggies. If you’re using fresh spinach and broccoli, prepare those as well.

- Cook on medium heat and continue to add more water as it evaporates. You’ll know when you’re almost done once the spinach is cooked (although the carrots can still be a bit on the hard side, they’re ok).
- At that point add salt, spices and the tomato juice. Cook a bit more until almost all the water has evaporated. Don’t forget to taste to make sure you like it.
