PECAN SPINACH SALAD
My family thinks this refreshing salad is sensational. Coated with a pleasant vinaigrette and topped with toasted pecans and blue cheese, it has an impressive look and taste. Though it can be prepared in 10 minutes or less, don't tell my family because they'd never believe it!

SPINACH, APPLE AND PECAN SALAD
Spinach, apples, red onion & pecans in a sweet-tart dressing. To make this salad extra special, I like to glaze the pecans by stirring them with 1 tablespoon sugar in a medium non-stick frying pan over medium heat, stirring constantly until sugar melts. Pour them out on waxed paper and separate with your spoon while still warm. If you do this, you don't need to toast the pecans. It takes about 5 minutes or so for the sugar to melt.

SPINACH SALAD WITH CARAMELIZED PECANS
Caramelized pecans make this salad especially good. This is a salad they used to serve at the restaurant one of my son's worked at, Rockbottom Brewery. If you want a salad with a bit more punch, try blue cheese instead of the feta.

SPINACH SALAD WITH STRAWBERRIES AND PECANS
I love this salad. The first time I made it the onion was a little too much, so next time I did not add the whole onion-I only used half. Or for a shortcut you could buy your favorite brand of Poppyseed dressing.

VEGAN BLUEBERRY SPINACH SALAD WITH PECANS - RUNNING ON REAL FOOD
From runningonrealfood.com
- Ideally, make the vegan feta the night before making the salad. If not, you’ll need 20 minutes to press the tofu and at least 30 minutes, preferably an hour to marinate it. First, place a of block of extra-firm tofu on a dish towel and fold the towel over it. Place the tofu wrapped in the cloth on a plate and place a heavy object on top of it. I use a few cookbooks but anything works. You can use a tofu press if you have one. Press for 20-30 minutes to remove excess water. Once pressed, crumble the tofu into feta cheese-sized chunks into a bowl or container and add the rest of the tofu feta ingredients. Mix well, cover and marinate for 1 hour up to overnight.
- To make the dressing, whisk the ingredients together in a dish or shake vigorously in a container.
- Assemble each salad by starting with a couple handfuls of greens then topping with blueberries, pecans and thinly sliced apple. Add a few tablespoons of feta to each salad then drizzle with dressing and enjoy.

- Toss celery, carrots, bell pepper, spinach, pecans, and dried cranberries or raisins in a large bowl. Drizzle balsamic vinaigrette to taste over salad to taste and toss for even distribution of dressing. Or serve in individual bowls with balsamic vinaigrette on the side, so that guests can top their own just before eating.
- Put the extra virgin olive oil, balsamic vinegar, stoneground mustard, maple syrup, and salt into a bowl. Whisk with a fork or whisk until it has a thick viscosity. Serve right away or refrigerate for later use in a covered container. If the oil separates from the vinegar, just give it a good shake.
