Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes. Remove from heat and set aside.
- In a large bowl, mix flour, salt and baking powder. Stir in eggs, milk and butter. Mix in spinach, onion and mozzarella cheese.
- Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.

I found this recipe in Rockwell Springs Trout Club Centennial Cookbook. I have made this recipe and it was received very well. It would make a good appetizer.

Steps:
- Mix flour, salt and baking powder together in large bowl.
- Brown the sausage and drain.
- Beat the eggs, milk and butter together.
- Mix the egg mixture into the flour mixture.
- Add the cheese, onion, sausage and spinach.
- Pour into a greased 9x13-inch pan.
- Bake at 350°F for 30 minutes.
- Cool the brownies slightly and then cut into squares to serve.

SPINACH BROWNIES
They look like brownies, but they're not sweet! Here's a wonderful way to have spinach. This is a treat my girls love to eat. Two 10 ounce packages frozen spinach, cooked, may be substituted for fresh.

LYNN'S "SICK" BROWNIES BITES

- Preheat the oven to 375 degrees F. Coat an 8-by-8-inch baking pan with cooking spray.
- Combine the graham crackers, coconut, walnuts, condensed milk, chocolate chips and salt in a medium bowl. Stir with a wooden spoon until thoroughly combined. Transfer the mixture to the prepared pan and press to the edges.
- Bake until the chocolate melts and the top is golden, 15 to 20 minutes. Stir the hot mixture in the pan until the chocolate is incorporated throughout. Press back out to the edges and set aside until cool enough to handle.
- Spread the confectioners' sugar on a dinner plate. Scoop out the brownie mixture by the tablespoon and shape into balls. While still warm, roll each ball in the sugar to coat. The bonbons will keep, tightly covered, for 2 days.
FUDGY CHOCOLATE-SPINACH BROWNIES
Steps:
- Preheat the oven to 350 degrees F. Butter an 8-inch square baking pan and dust it with the cocoa powder, tapping out the excess.
- Fill a medium saucepan 1/3 full of water and bring it to a boil over medium-high heat. Put the butter, chocolate and espresso powder in a heatproof bowl, set it on the saucepan and turn off the heat. Let the bowl stand for about 5 minutes until the chocolate mixture is melted. Stir together until very smooth. Stir in the sugar until dissolved. Remove the bowl from the saucepan; let cool to room temperature.
- Squeeze any excess moisture from the spinach and put it in a food processor. Add the vanilla and 1 tablespoon of water and puree until very smooth. Add the spinach puree and eggs to the cooled chocolate mixture and whisk until well combined.
- Whisk together the flour, cocoa powder, baking powder and salt in a medium bowl until combined. Add the wet ingredients to the dry and fold with a rubber spatula until combined. Add the chocolate chips and stir to combine. Pour the batter into the prepared pan; use an offset spatula to spread the batter evenly. Bake until set and a toothpick inserted in the center still has a few moist crumbs stuck to it, about 25 minutes.
- Cool the brownies completely in the pan before cutting.
SPINACH BROWNIE BITES (FROM SCRATCH)
Adapted from the spinach brownies recipe originally from Parents Magazine. And just like the original spinach brownie recipe, you can't taste the spinach! Yet these are even more kid-friendly because they are bite-sized. I had a gigantic Costco-sized bag of fresh spinach so I had to find things to do with it, after making spinach salad, spinach quiche, spinach-artichoke dip, I still had some steamed spinach left over so I made these. A note on the amount of spinach: I only added enough of the creamed spinach to the chocolate batter until it looks slightly greenish, it may not the the entire amount - If you use more spinach make sure to add more sugar and cocoa powder to taste or it will be bland (taste before adding eggs).

- Preheat oven to 350°F.
- Steam spinach until soft, drain and set aside.
- Using a glass or metal mixing bowl on top of a saucepan 1/2 full with water (double broiler method), break chocolate into small pieces and add butter, melt over hot but not boiling water. Stir until smooth and melted, remove from heat and let cool to room temperature, set aside.
- Using a food processor, cream the spinach with drizzles of apple juice (adding only enough to be able to cream the spinach).
- Add the spinach mixture to the chocolate mixture, blend.
- Add the sugars, and vanilla. (you can taste this before adding eggs to make sure it's sweet enough if you'd like).
- Add eggs to the chocolate mixture.
- In a separate bowl, sift together flour, salt, baking powder.
- Fold the flour mixture into the chocolate mixture and mix well.
- Stir in the chocolate chips.
- Butter or spray mini muffin tins.
- Scoop or pour in batter to the top of tins and bake for about 15 - 18 minutes (or until firm).
- Cool 5 - 10 minutes then pop them out (using a toothpick to loosen around edges if needed) and finish cooling on racks, if your kids can wait that long that is.

- Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt. Spoon 1 tablespoon into each cup. Bring pastry corners together and pinch to seal. In a small bowl, beat remaining egg. Brush over pastry edges. Bake until puffed and golden brown, about 20 minutes.

- Preheat oven to 425 degrees. Whisk together milk, flour, and 1 1/4 teaspoons salt. Add eggs; whisk to combine. Stir in spinach, red peppers, and cheese.
- Line a 9-by-13-inch baking dish with lightly oiled parchment, leaving a 2-inch overhang on two sides. Pour in egg mixture; bake until just set, 18 to 20 minutes. Let cool 10 to 15 minutes.
