- Sauté onion until cooked.
- Minced garlic and spinach.
- Add beef and cook until brown and minced garlic.
- Add broth and spinach.
- Cook until spinach is wilted.
- Red pepper flakes, and sour cream.
- Season with salt and pepper.
- This can be served with rice or noodles and topped with Parmesan Cheese.

- In a large bowl, whisk the flour, eggs, milk, butter, onion, Parmesan cheese, garlic, salt and cayenne until combined. Fold in spinach and Monterey Jack cheese. Transfer to a greased 1-1/2-qt. baking dish., Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Serve immediately.

Steps:
- Preheat oven to 350^F.
- Butter an 11x7x2 inch baking dish.
- Combine the first 7 ingredients in a large bowl and set aside.
- In a large pot, heat the oil over medium heat.
- Add the spinach and saute about 3 minutes, until wilted and juices evaporate.
- Drain well.
- Arrange spinach over the bottom of the prepared dish.
- Sprinkle with the cheese mixture and bake until heated through, about 20 minutes.
- Preheat broiler and broil spinach dish until the cheese is golden brown on top, watching closely so not to burn, about 2 minutes.

- Set the oven to 180. Place the spinach in a food processor and blitz until shredded (not pureed). Add to a bowl along with the grated cheese and dried thyme.
- Crack the 2 eggs into a bowl and mix along with the yoghurt.
- Sieve the flour and baking powder over the bowl then mix well to combine
- Spoon into a muffin tray and bake for 20-25 minutes before allowing to cool.
