STARBUCKS GINGERBREAD
For those of you who may not like the very spicy, dark version so often served during the holidays, this loaf is lighter and very moist. A hint of orange is a wonderful addition, and the cream cheese icing is a perfect compliment. (Originally published by Veronica Hill.)

Steps:
- Preheat oven to 350°F Grease and flour a 9-inch loaf pan, or even a square baking pan.
- In a medium bowl, stir together the flour, ginger, cinnamon, cloves and salt; set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Dissolve baking soda into applesauce and mix into creamed butter. Add flour mixture. Mix until smooth.
- Pour the batter into a loaf pan.
- Bake for 40-50 minutes, or until a toothpick inserted into the center of the cake comes out just slightly sticky. (Be careful not to over bake, for this cake can dry out easily. Just remember that the toothpick shouldn't come out clean, but a little sticky).
- For the frosting, beat the cream cheese until light and fluffy. Beat in the vanilla. Gradually beat in the powdered sugar. Frost the cake when it is completely cooled. Decorate with chopped candied orange peel or candied ginger.
- *Note: This recipe tastes best the next day.

STARBUCKS GINGERBREAD
Please note I have not tried this as yet and I really prefer posting recipes that I try firstly but this was submitted for a request on the boards. I am not claiming it to be the *real* Starbuck's gingerbread, but it may be very close. There was no mention as to what size pan to bake it in so use your own judgment. I assume by the amount of ingredients an 8x8, 9x9 or an 11x7-inch pan would work fine.

- Set oven to 350°F.
- In a bowl cream butter with sugars and vanilla until fluffy.
- Beat in eggs, orange zest and fresh minced ginger, water and applesauce until well combined.
- In a bowl sift together flour with cinnamon, cloves, nutmeg, mustard powder, baking powder, baking soda and salt; add to the creamed ingredients and beat until combined.
- Mix in the candied ginger.
- Pour into a well greased baking dish and bake for about 35-40 minutes or until cake tests done.

STARBUCKS GINGER MOLASSES COOKIES

- Heat oven to 375 degrees with the rack in the center. Line 2 baking sheets with parchment paper. Set aside.
- Sift flour, baking soda, salt, cinnamon, ginger, allspice, and cloves into a medium bowl. Set aside.
- Cream the butter and brown sugar in a large mixing bowl with mixer on high speed until light and fluffy, about 1 minute. With mixer on medium speed, beat in the egg and molasses, then increase the speed to high and beat about 1 minute longer, until the mixture no longer looks curdled. Scrape the sides with a rubber spatula several times while mixing.
- Mix in the flour mixture on low speed. The batter will be rather stiff. Place some granulated sugar on a small plate or saucer. Use a 1/4 cup ice cream scoop or a measuring cup to form 1/4-cup portions of dough. (Spray the cup or scoop with the optional non-stick vegetable spray to make it easier to release the dough.) Transfer the dough to your hands and roll each portion into a rough ball, then roll each ball into the sugar. Place six sugared balls on each baking sheet, spacing them evenly, because they will spread during baking.
- Dampen your fingers with water and press down lightly on each cookie to flatten it a little and dampen the top. Refrigerate one filled baking sheet while the other bakes.
- Bake for 12 minutes, or until the cookies have spread and are firm to the touch. Rotate the sheet 180 degrees halfway through the baking time. Remove from the oven and let the cookies cool on the baking sheet.
- Note: This dough can be frozen for slice-and- bake cookies. Just roll into a log 2-1/2 inches thick. Wrap in plastic wrap and then in foil. Can be stored in the freezer up to 6 months.
