Roasted Tomatillo and Apple Salsa image

Steps:

  • Preheat the oven to 350 degrees F. Place the tomatillos, apples, garlic, jalapenos and onion on a baking sheet; toss with the olive oil, 2 teaspoons salt and 1 teaspoon pepper. Roast until the tomatillos are softened and slightly charred, about 20 minutes. Peel the garlic. Let the roasted vegetable mixture cool to room temperature.
  • Puree the roasted vegetable mixture and cilantro in a blender until smooth. Add 2 to 3 tablespoons water to loosen, if needed. Season with salt and pepper.

1 pound tomatillos (about 12), husked and rinsed
2 Granny Smith apples, quartered
2 cloves garlic, unpeeled
2 jalapeno peppers, stemmed
1/2 white onion
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Season skirt steak with olive oil, salt, pepper, chili powder, and cumin.
  • Cook on high heat for roughly 3 minutes each side, for medium-rare.
  • Let the steak rest for 10 minutes.
  • While the steak is resting, sauté onion and garlic until slightly translucent. Add bell peppers, jalapeño, salt, and pepper, cook slightly.
  • Slice the steak into strips.
  • Mix the steak into the pepper mix. Remove from heat and set aside.
  • In a clean pan, melt butter. Lay the tortilla on the buttered pan, add cheese, fajita mixture, more cheese, then top with another tortilla and pat it down.
  • Flip the quesadilla over and cook the other side until it's golden.
  • Remove from pan and cut into quarters or eighths. Repeat these steps with the remaining tortillas.
  • Serve immediately with sour cream, salsa, and guacamole.

Steps:

  • Preheat broiler.
  • On a baking sheet, place tomatoes and chiles.
  • Broil turning once halfway, until slightly charred, about 5 to 7 minutes.
  • Discard chile stems.
  • In blender or food processor combine tomatoes, chiles, onion, cilantro, lime juice and salt.
  • Puree until well blended, set aside.
  • Heat large skillet over medium heat.
  • Place tortillas one by one in skillet and toast until puffed and very lightly browned, about 1 minute per side.
  • Lay tortillas on flat work area.
  • On half of each tortilla, place 1/4 chicken, 1/4 cheese and about 2 tbsp of the salsa.
  • Fold tortillas in half.
  • In lightly oiled skillet or grill pan over medium heat, cook quesadilla until crisp and golden brown on both sides, about 1 to 2 minutes per side.
