RED WINE-BRAISED CABBAGE AND ONIONS

This dish is the vegetable incarnation of mulled wine-the cabbage and onions soak up all the flavor of the red wine and spices, becoming incredibly aromatic.

Red Wine-Braised Cabbage and Onions image

Steps:

  • Heat butter in a 6- to 8-quart wide heavy pot over moderately high heat until foam subsides, then cook onion and cabbage, stirring frequently, until wilted and slightly browned, about 20 minutes.
  • Add wine, water, vinegars, apple, sugar, and salt and bring to a boil.
  • Wrap peppercorns, cloves, and bay leaf in cheesecloth and tie with string. Add to cabbage mixture, then cover cabbage directly with a round of parchment or wax paper and cover pot with lid. Reduce heat and simmer until cabbage is very tender, about 2 hours.
  • Discard cheesecloth bundle and season cabbage with salt and pepper.

3/4 stick (6 tablespoons) unsalted butter
1 1/2 pound red onions, halved lengthwise, then cut lengthwise into 1/4-inch-thick slices
1 (3-pound) head of red cabbage, cut lengthwise into 8 wedges and wedges cut crosswise into 1/4-inch-thick slices (16 cups)
2 cups dry red wine (from a 750-ml bottle)
2 cups water
1/4 cup red-wine vinegar
1/4 cup balsamic vinegar
1 firm sweet apple, such as Honey Crisp, Gala, or Fuji, peeled and coarsely grated
1 1/2 tablespoons sugar
1 1/4 teaspoons salt
10 whole black peppercorns
2 whole cloves
1 Turkish or 1/2 California bay leaf

Steps:

  • Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. Add vinegar to the pan and turn the cabbage in it. Sprinkle sugar over the cabbage and turn again. Season with mustard seed, salt and pepper and reduce heat a bit. Let cabbage continue to cook 10 minutes or until ready to serve, stirring occasionally.

Steps:

  • For the dressing, put the wine, vinegar, cloves and cinnamon in a saucepan. Cook for 15-20 mins until the liquid has reduced by 3/ 4 (to about 75ml ). Add the orange zest and juice to the pan with the crème de cassis, and set aside to keep warm.
  • Next, shred the cabbage as finely as possible. Heat a wok until very hot, then add the goose fat and fry the cabbage and ginger for 10 mins. Toss through the dressing and cook for 5 mins more until the cabbage is softened but retains a good bite, serving sprinkled with sea salt.

  • Finely shred the cabbage - the quickest way to do this is in a food processor with a shredder attachment or using a mandoline.
  • Heat the oil in a wok or large frying pan, then add the cabbage and kale. Stir-fry over a high heat for 3-4 mins or until the cabbage starts to wilt, then add the rest of the ingredients. Toss everything together really well, continue to cook for a further 4 mins and season before serving. Keep warm in a low oven if needed or leave to cool, cover, chill and reheat in a pan or microwave the following day.

  • Cook the rice according to the package directions. Depending on what kind of rice you decide to use, the amount of water needed can vary slightly.   • Drain the tofu from any packaging liquid. Place on a plate with a paper towel underneath, and place a paper towel over the top and another plate. Like a tofu sandwich. Place a few canned goods over the top of the top plate. This will help the tofu to drain more. Cut up into small squares. Place in a ziplock bag, add the cornstarch, and give it a gentle shake. Place on a baking sheet lined with parchment paper. Bake at 350°F for 25-30 minutes, tossing once in the middle of the bake time.
  • Prepare all your vegetables. Chop up the cabbage, bell pepper, and onion. Mince the garlic. In a large cup, stir together the sesame oil, soy sauce, oyster sauce, brown sugar, rice vinegar, and red pepper flakes until the sugar dissolves. Heat the olive oil over high heat in a large cast iron skillet or a wok. Add the onion and bell peppers; cook for 1-2 minutes. Add in the garlic and cabbage, and cook for an additional 2-3 minutes. Now add in the rice, pour the sauce over everything, and continue to cook until the liquid dissolves and everything is hot. Toss in the baked tofu and cilantro just before serving.
