LIME AND TEQUILA INFUSED STRAWBERRIES

This is a grown-up only recipe that can be eaten plain or turned into some adult strawberry shortcakes by serving over cake and topping with whipped cream.

Steps:

  • Mix triple sec, sugar, lime juice, tequila, and lime zest in a bowl; stir to dissolve sugar. Pour over strawberries in a large bowl. Let stand, stirring occasionally, until juice forms, about 1 hour.

Roasted Strawberries with Black Pepper image

Steps:

  • Rinse the strawberries in cool water, place in a colander or strainer and shake off most of the water. Slice strawberries about 1/8-inch thick, place them in a large bowl, and sprinkle them with the sugar. Cover and refrigerate for at least 1 hour, and up to 4 hours. Preheat oven to 375 degrees. Toss strawberries with the black pepper, add the balsamic vinegar, and put the strawberries and all of their juices into a large saute pan or a large ovenproof dish. Roast for 8 to 10 minutes, until the juices are bubbling and the strawberries are hot but not mushy. Divide among individual dishes and serve immediately, with ice cream or whipped cream if desired.

Balsamic Strawberries With Black Pepper Wafers image

Steps:

  • In a bowl combine strawberries, sugar and vinegar. Cover and refrigerate for 1 hour. Serve with wafers.
  • Wafers: Preheat oven to 180°C (350°F, Gas 4) or lower for fan-forced. Line 2 oven trays with baking paper.
  • Place flour, extra sugar, egg white, butter and vanilla into a small bowl then beat with a wooden spoon until smooth.
  • Place 1 level teaspoon of mixture on prepared tray. Use the back of spoon to smooth mix into an 8cm circle. Repeat, allowing 2cm between each wafer.
  • Sprinkle pepper over each wafer then bake about 5 mins, or until lightly brown. Cool 15 minutes.
