STRAWBERRY BANANA SHORTCAKE
I cannot tell a lie at all. Strawberries and bananas are two of my favorite fruits. I just love 'em. Nothing better. This rich shortcake came from a local restaurant and the recipe was given on our local midday show. I was THRILLED to DEATH! It's so decadent...give it a try when the strawberries are fresh and be sure to make some extra sliced strawberries and bananas to top the cake slices.

Steps:
- Preheat oven to 350 degrees.
- Coat a 9" round cake pan with cooking spray and line bottoms with wax paper and spray wax paper with cooking spray; set aside.
- Beat egg at medium speed with a mixer until foamy.
- Gradually add sugar, beating well.
- Combine flour, baking powder, baking soda, and salt.
- In a separate bowl, combine buttermilk, melted margarine, and vanilla.
- With mixer running at low speed, add flour mixture to egg mixture alternately with buttermilk mixture, beginning and ending with flour mixture.
- Pour batter into prepared pan.
- Bake 28 minutes.
- Let cool in pan 10 minutes on a wire rack; remove from pan.
- Let cool completely on wire rack.
- Combine yogurt and brown sugar; stir well.
- Using a serrated knife, split cake in half horizontally.
- Place bottom layer, cut side up, on serving plate.
- Spread with half of yogurt mixture, top with strawberries.
- Combine bananas and lemon juice and toss gently. Drain bananas and discard juice.
- Arrange bananas over strawberries; drizzle with remaining yogurt mixture.
- Top with remaining layer.
- Sift powdered sugar over cake.
- Serve with whipped cream also, if desired.

SHORTCAKES WITH WARM STRAWBERRY SAUCE
Steps:
- For Biscuits:
- Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
- Stir together baking mix, melted butter and cranberry juice in a large bowl, until a soft dough forms. Drop in 4 even mounds onto the baking sheet. Sprinkle the tops with sugar and bake for 10 to 12 minutes or until golden brown. Remove and cool completely.
- For Strawberry Sauce:
- In a medium bowl whisk together sugar, cornstarch and cranberry juice. In a large skillet combine strawberries with cornstarch mixture. Stir together and bring to a simmer over medium heat making sure to stir often. Turn down heat to low and simmer for 5 minutes or until thickened. Remove from heat and let cool slightly.
- For Serving:
- In a large mixing bowl that has been chilled, combine the heavy cream and powdered sugar and beat with a hand mixer until soft peaks form.
- To serve, cut each cooled shortcake in half horizontally and place bottoms on serving plates. Spoon a few tablespoons of the warm strawberry sauce over each of the shortcake bottoms. Place shortcake tops on fruit. Spoon on a little more strawberry sauce and top with whipped topping.
- In the bowl of a food processor combine flour, baking powder and salt. Pulse for 15 seconds. Add shortening and pulse until mixture is similar in texture to cornmeal. If you do not have a food processor shift together the flour, baking powder, and salt into a large bowl. Cut in the shortening with a fork or pastry blender until mixture is similar in texture to cornmeal.
- Use in recipes that call for Bisquick or all-purpose baking mix.
THE BEST CLASSIC STRAWBERRY SHORTCAKE

A simple recipe like this one allows its ingredients to shine, so use the very best berries you can find.

- For the shortcakes: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Whisk the heavy cream, sour cream and vanilla in a small bowl; refrigerate until ready to use. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. Add the butter; pulse until the mixture looks like fine meal. Pour in the chilled heavy cream mixture and pulse until just combined.
- Lightly flour a work surface and dump the dough onto it. Pat out the dough 1/2-inch thick. Cut out as many biscuits as you can with a 2 1/2-inch biscuit cutter. Then pat the remaining dough out to 1/2-inch thick again. Cut more biscuits; you should get 12.
- Put 6 of the biscuits on the prepared baking sheet. Brush the tops generously with cream, then top each cream-brushed biscuit with one of the remaining biscuit rounds. (This makes it easier to split once they are baked.) Brush the top of each biscuit stack with more heavy cream and sprinkle 1 teaspoon granulated sugar on each biscuit.
- Bake the biscuits until golden and puffed, about 30 minutes. Let cool for 5 minutes, then transfer to a wire rack and cool completely.
- Meanwhile, for the topping: Toss the strawberries and 2 tablespoons of the brown sugar in a medium bowl.
- Just before serving, beat the heavy cream, sour cream, the remaining 2 tablespoons brown sugar and vanilla in a large bowl with a mixer on medium-high speed until soft peaks form, about 2 minutes.
- Split the shortcakes in half. Spoon half the cream on the bottom of the biscuits, top evenly with the strawberries and top with the remaining cream. Put each biscuit top on and serve.

- Heat oven to 350 degrees; line a 13x9x2-inch baking pan with nonstick foil; set aside.
- For cake, in blender, combine 1 1/3 cups water, the bananas, egg whites and oil.
- Blend until smooth, about 1 minutes.
- Place cake mix in large bowl and add mixture from blender.
- With an electric mixer, beat on low speed for 30 seconds, then increase speed to high and beat 2 minutes.
- Pour into prepared pan and bake at 350 degrees for 33-35 minutes.
- Cook cake in pan on a wire rack for 15 minutes, then, using foil, lift cake from pan and cool completely.
- For filling and fruit, meanwhile, cook pudding mix with milk for 15-20 minutes over medium heat, until thickened and bubbly.
- Transfer to a bowl and refrigerate 30 minutes.
- Trim edges from cooled cake.
- Cut in half, then cut one half into cubes (about 20).
- Place in a trifle dish or bowl and press slightly to compress.
- Spoon 2 cups pudding over cake.
- Top with 1 sliced banana and 1 cup of the sliced strawberries.
- Cut second cake half into cubes and continue layering cake, pudding, bananas and strawberries.
- Top with heavy cream.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Melt butter over medium heat in small saucepan. Stir continually, letting foam dissipate, just until butter begins to brown, 2 to 3 minutes. Remove from heat.
- Whisk together self-rising flour and 1/4 cup white sugar in a bowl. Add milk, 1/4 cup cream, and toasted butter. Mix just until ingredients come together. - Split biscuit in half. Place bottom half in a bowl. Spoon strawberries and juice over shortbread half. Top with shortbread top and spoon on more strawberries and juice over the shortbread. Finish with a dollop of whipped cream.

- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 10-inch cast iron skillet; line the bottom with a round of parchment paper.
