DAWA (AFRICAN COCKTAIL)
Dawa means "medicine" or "magic potion" in Swahili. In other words, a dawa is said to be so potent that it will cure whatever ails you. The recipe is based on a famous Brazilian drink that was introduced to Kenya. It is now one of the most widely consumed cocktails in Kenya and has spread through out North and South Africa (especially in touristy regions). Steps:
- Put lime and sugar into a whisky tumbler.
- Crush limes slightly, add ice and pour in the vodka.
- At this point you twist a dawa stick into some honey and add the stick to the drink. A wooden honey stick or other type of stick twisted in honey will work.
- Muddle limes with dawa or honey stick. The more you crush the limes into the mixture and stir the sweeter the taste.

STRAWBERRY SAUCE

- Combine the strawberries, sugar, lemon juice and 2 tablespoons water in a saucepan. Cook over medium heat, stirring occasionally, until the berries break down, about 10 minutes. Remove from the heat; stir in the vanilla.
- Strain through a fine-mesh sieve into a bowl, pressing against the solids; let cool completely. To store, cover and refrigerate up to 4 days.

- Crash and shake strawberries and lime slices with strawberry syrup in the bottow of an old-fashioned glass.

STRAWBERRY SALAD

- For the salad: Preheat the oven to 400 degrees F. In a small bowl, mix the ramen noodles, almonds, sunflower seeds and melted butter. Transfer to a baking sheet and toast in the oven, stirring occasionally, until browned, about 10 minutes. Remove from the oven and set aside to cool.
- Tear the lettuce and combine with the spinach, strawberries and cheese in a large salad bowl.
- For the dressing: Dissolve the sugar in the vinegar. Combine the oil, paprika, salt and garlic and then add to the sugar-vinegar mixture. Mix well and store in the refrigerator until ready to serve.
- Just before serving, sprinkle the crunchy topping over the salad green and toss the salad with enough dressing to coat the greens.
STRAWBERRY DAIQUIRI
Steps:
- Add to a blender and puree: ice cubes, light rum, Triple Sec, fresh strawberries and lime juice. Rub the rim of a glass with lime. Roll the glass in sugar. Garnish with lime wedges. Taste and enjoy!
STRAWBERRIES TWO WAYS
Steps:
- Divide the strawberries between 2 bowls.
- To 1 bowl, add the lemon juice and 2 tablespoons sugar and stir well. Let stand for at least 15 minutes before serving.
- To the other bowl, add balsamic vinegar, 1 tablespoon sugar, and the basil. Toss to combine. Let stand for at least 15 minutes before serving.
- Serve over vanilla ice cream, if desired.
STRAWBERRY FOOL

- In a blender, combine the strawberries (reserve a few slices for garnish), sugar and lemon juice. Puree until smooth. Push the berry mixture through a sieve and discard the seeds.
- Using an electric mixer, whip the cream just until stiff peaks form. Take a large spoonful of the whipped cream and stir it into the strawberry puree to lighten the mix. Fold the strawberry mixture gently into the whipped cream. Gently spoon the fool into a chilled serving bowl and garnish with the reserved strawberries and mint leaves. Refrigerate before serving, at least 1 hour and up to 4 hours.
DAWA
This comes from the book Around the World in 80 Bars, and the recipe comes from "The Carnivore" in Nairobi, Kenya. The Carnivore is a nyama choma (barbecued meat) restaurant, and is licensed to serve gazelle, giraffe, and zebra. In Swahali, Dawa means "somewhere between a medicine and a magic potion'. Traditionally, this drink is served with a small wooden masher so that you can release more lime juice and adjust the flavor of your Dawa to suit your liking. This is a pretty strong tasting drink, so I generally release more lime juice!!

- Chop strawberries into around 1cm bits.
- Put strawberries in a pot and stir for at least 10 minutes.
- Next add ALL sugar and lemon juice and stir for around 2 minutes, and then leave it to boil for around 15 minutes.
- After that it should generally be ready, pour into a jar or anything, really and leave the lid off to cool the jam, at this time it will be very hot.
- Leave the jam to cool for at least 15-30 minutes and then it will be ready.
- (NOTE: This is not a thick jam. It should still have chunks of strawberries in it).

STRAWBERRY PUDDING
What an unusual use for this glorious summer fruit! A Danish recipe that I thoroughly enjoyed. Though the original recipe called for vanilla, I found that the lemon zest did more to perk up the flavor of the berries. Cooking time does not include cooling time.

- Clean and rinse berries. If they are large cut in halves or quarters.
- Bring water to a boil over medium heat. Add sugar and strawberries and simmer until berries are tender, about 8 minutes. You will still have lumps of berries. If you want a smooth consitency, break the fruit up by pushing the berries with the back of a spoon on the side of the pan.
- Dissolve cornstach in a little water and add to fruit, stirring constantly. Add vanilla or zest if desired (one or the other not both).
- Bring to rolling boil, stirring constantly. Continue stirring and allow pudding to boil a few minutes. The pudding should no longer be cloudy and regain its shine and gloss.
- Transfer to a bowl and place in the refrigerator until thouroughly cool. Depending on the bowl size and shape, this could take several hours.
- If you are planning to substitute part of the sugar (would not suggest all) with baking Splenda, add the splenda to the bowl just before cooling.
- Optional serving ideas: Top with whipped cream, Cool Whip or vanilla yogurt. Chocolate shavings or a dusting of cocoa are also nice.
