Steps:

  • Bring water, sugar, vanilla bean, and lemon slice to a boil over high heat, stirring until sugar is dissolved, then boil 5 minutes.
  • Remove vanilla bean and lemon slice from sugar syrup with a slotted spoon, then reduce heat to moderate. Stir cornstarch mixture and whisk into syrup, then simmer, whisking constantly, until slightly thickened, about 2 minutes. Increase heat to high and add strawberries, then boil 1 minute.
  • Transfer to a gratin or chafing dish. Heat kirsch in a small saucepan over moderate heat until warm. Remove from heat, then carefully ignite kirsch with a kitchen match and pour, still flaming, over warm berries. When flames die out, serve immediately, over ice cream.

1/2 vanilla bean, halved lengthwise
1 (1/4-inch-thick) lemon slice
1 tablespoon cornstarch stirred with 2 tablespoons cold water

FRESH STRAWBERRY JAM

Here's my preferred method for making strawberry jam. It uses a lot less sugar than many other recipes, and I use homemade pectin puree. It's amazingly delicious.

Fresh Strawberry Jam image

Steps:

  • Place chopped apples, lemon, and water in a saucepan. Bring to a boil over high heat; reduce heat to medium. Cover and cook, stirring occasionally, until fruit is very soft and collapsed, about 30 minutes. Remove from heat. Strain through a fine sieve into a bowl to separate the liquid from the pulp and seeds. Press with the back of a wooden spoon or spatula to extract as much liquid as possible. Discard pulp and seeds. You should have about 1 1/2 cups pectin puree. A bit more or less will work fine.
  • Place hulled strawberries in the bowl of a food processor. Pulse until berries are pureed, about 1 minute. Transfer to a saucepan. Add strained pectin puree to strawberries. Stir in 1 cup sugar. Bring mixture to a simmer over medium-high heat. Reduce heat to medium; simmer for about 15 minutes. Skim off foam. Adjust heat, if necessary, to ensure mixture is always simmering without boiling over. Stir in remaining 1 1/4 cup sugar.
  • Cook, stirring often, until mixture reaches 220 degrees F (105 degrees C), 50 to 60 minutes. Remove from heat. Whisk in lemon juice.
  • Ladle into sterilized canning jars while still hot. Allow to cool to room temperature uncovered. Cover and refrigerate 1 or 2 days before serving to allow sugar and pectin to thicken up the jam.

Steps:

  • Slice up fresh strawberries until you have enough to fill a one cup measure.
  • Add to a blender or food processor, or if you only have a stick mixer, just put it in a large pyrex jug.
  • Add rest of ingredients.
  • Blend until smooth.
  • You may want to try this a little bit cooler for summer days, omit the water and add a few ice cubes.
  • I only leave out the ice cubes because my food processor can't handle hard ice.
  • Also it does tend to separate if you leave it sitting around for a minute, Don't let this put you off, just stir it up a bit, it tastes the same, just tends to be more frothy at the top then.

  • Have the cup or glass ready on a serving tray, In a julep cup or tall glass, crush 1 strawberry well.
  • Add the sugar and just enough bourbon to melt sugar, stir until dissolved.
  • Pack half of the glass with shaved ice and remaining bourbon.
  • Stir without touching glass with your hands.
  • Pack the glass with ice to the rim and add a straw to one side.
  • Stir until cups frost, again DON"T touch hands to glass.
  • Remove straw and garnish with mint and the remaining strawberry and serve. ENJOY.
