SUPER SALAD (ADAPTED FROM WHOLE FOODS SUPERFOOD SALAD)

You will feel SUPER after eating this healthy salad!! Packed with high fiber veggies and nuts it is very satisfying.

Super Salad (Adapted from Whole Foods Superfood Salad) image

Steps:

  • Combine and toss.
  • **All the measurements are estimates. I typically eyeball everything based on how much I want to make. I like to chop both the kale and cabbage well because it allows all the ingredients to incorporate better and it is just yummier that way. This salad stores really well in an air tight container in the refrigerator minus the dressing. I like to portion it out into single serving containers for ease as well as when I add the dressing I just replace the lid and shake to distribute the dressing.

3 cups kale, chopped (I like to use both baby and regular)
1 cup napa cabbage, chopped
1 cup broccoli slaw mix, chopped
1/4 cup organic edamame (optional)
1/2 cup vegetables (cauliflower and carrots, I throw a few florets and baby carrots together in the food processer and g)
red onion (optional)
1/4 cup raw sunflower seeds
1/4 cup raw cashews
1/4 cup raspberries (I like using freeze dried ones slightly crumbled)
archer farms acai light raspberry vinaigrette dressing (I should make my own but something has to give sometimes and this dressing is really a pretty decent)

SUPER CORN SALAD

A great 'make ahead' salad to have on hand when expecting family and friends for the weekend. This is one of our favorites and most salad lovers request the recipe. Be sure to refrigerate preferably in a covered jar which I find keeps it crisp and fresh. Only the salad itself goes into the serving bowl - the marinade remains in the jar. Using one of your special glass bowls adds to the presentation.

Super Corn Salad image

Steps:

  • In mixing bowl add: 2 (12 0z.) cans of drained kernel corn.
  • Add the prepared vegetables.
  • In a small bowl combine the marinade ingredients.
  • Combine and toss, cover and allow to marinate for at least 4 hours.
  • (better if marinated overnight).
  • Store in fridge.

2 (12 ounce) cans of drained kernel corn
1/2 cup thinly sliced celery
1/4 cup diced green pepper
1/4 cup diced red pepper
1/4 cup diced yellow sweet pepper (optional)
2 tablespoons chopped green onions
1 tablespoon chopped parsley
marinade
1/4 cup sugar
1/3 cup vinegar
1/4 cup vegetable oil
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon dry mustard
1/2 teaspoon tarragon
1/4 teaspoon basil
2 teaspoons parsley

SUPER SALAD!

Best. Salad. Ever...in my humble opinion. The recipe actually came from my mother-in-law. She served this at a party, and my husband and I couldn't stop eating it! You can experiment with different dried fruits, nuts, and cheeses (apricots, dates, macadamia nuts, pistachios, Stilton, feta, etc..), but the fruit/nut/cheese combo is the key! I usually use reduced-fat blue cheese, but the computer wouldn't recognize the ingredient, so I used regular Gorgonzola in the recipe.

Steps:

  • In a liquid measuring cup, combine the mustard, maple syrup, ginger, garlic, sesame seeds, cayenne, apple cider vinegar, lemon juice, and olive oil. Whisk until fully incorporated. Season to taste with salt and pepper.
  • Add the kale, carrots, red cabbage, broccoli, red cabbage, bell pepper, avocado, walnuts, and parsley to a large serving bowl.
