SUPER-STUFFED FRENCH TOAST

Steps:
- Preheat indoor grill or griddle.
- In a medium bowl, whisk together eggs, cream, vanilla, cinnamon, pinch of salt and sugar until well combined.
- Lay 6 slices of bread out and lightly brush egg mixture around edges. Press a "pocket" in the middle of each slice of bread for the filling. Heap 2 teaspoons of apple or cherry pie filling in the middle of each bread pocket.
- Take remaining 6 slices and brush the edges with egg mixture. Place on top of bread with filling and seal edges with fingers.
- Dip stuffed bread in the egg mixture and place on sprayed griddle; cook for 6 to 8 minutes, turning once, until lightly browned. Sprinkle with cinnamon and/or powdered sugar.

- To make the french toast:
- Spread butter over bottom of heavy large baking pan with 1-inch-high sides. Arrange bread slices in pan. Beat eggs, milk, sugar, syrup, vanilla and salt to blend in large bowl. Pour mixture over bread. Turn bread slices to coat. Cover with plastic and refrigerate overnight.
- Preheat oven to 400°F. Bake French bread 10 minutes. Turn bread over and continue baking until just golden, about 4 minutes longer. Transfer cooked toast to plates and sprinkle with powdered sugar. Serve immediately, passing Maple-Walnut Syrup separately.
- To prepare maple syrup:
- Combine syrup and walnuts in heavy medium saucepan. Bring to simmer. Serve syrup hot. Makes about 3 cups.
BAKED FRENCH TOAST

- Cut 12 (1-inch-thick) diagonal slices from bread, reserving ends for another use.
- Generously butter 1 side of each slice and arrange slices, buttered sides up, in 1 layer in a buttered 13- by 9- by 2-inch glass baking dish, squeezing them slightly to fit if necessary.
- Whisk together eggs, milk, and 1/4 teaspoon salt until combined well, then pour evenly over bread. Chill, covered, until bread has absorbed all of custard, at least 1 hour and up to 1 day, depending on bread.
- Preheat oven to 425°F.
- Bring mixture to room temperature and sprinkle bread with sugar.
- Bake, uncovered, in middle of oven until bread is puffed and top is golden, 20 to 25 minutes. Serve immediately.

- Whisk together eggs, cream, vanilla, cinnamon, nutmeg, and salt in a medium bowl; set aside.
- Place bread in a shallow baking dish large enough to hold bread slices in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn slices over; soak until soaked through, about 10 minutes more.
- Preheat oven to 250 degrees. Place a wire rack on a baking sheet, and set aside. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread. - In a medium-size bowl, combine flour, sugar, salt, and cinnamon.
- Add milk, eggs, and vanilla. Whisk briskly to remove all clumps.
- Grease a skillet or frying pan with a paper towel that has been dipped in oil or shortening.
- Heat skillet over medium-high heat until a drop of water sizzles when flicked onto skillet.
- Dip both sides of bread slice into the batter briefly.

- Place half of the bread cubes over the bottom of a well-buttered 13x9x2-inch baking dish.
- Sprinkle cream cheese and blueberries over bread cubes.
- Arrange remaining bread cubes over blueberries.
- In a large mixing bowl, beat eggs with a rotary beater, beat in milk and the 1/2 cup syrup.
- Carefully pour egg mixture over the bread mixture.
- Cover and chill in the refrigerator for 2 to 24 hours.
- Bake, covered, in a 375 oven for 25 minutes.
- Uncover and bake about 25 minutes more or till a knife inserted near the center comes out clean, and topping is puffed and golden brown.
- Let stand for 10 minutes before serving.
